Ready in 15 minutes (faster if you have pre-cooked bacon), this grilled sandwich is good for any meal including afternoon or midnight snack!

Be prepared for more variations of a grilled cheese sandwich! I completely 100% love this sandwich!

Let’s be real. I could never go on a Keto diet because I love grilled cheese too much for that! When I saw a photo of a scrambled egg and grilled cheese combo couldn’t get it off my mind. A new lover of fried eggs, I wanted that runny yolk and gooey cheese.

But then I had bacon leftover from breakfast.

And, I saw an avocado in the fridge that I needed to use. Like, it was 20 seconds before being over-ripe! 😜

So I loaded up this sandwich with all of those ingredients and I was not disappointed!

Why double fisted?

There’s a lot of layers to this sandwich, pick it up with both hands and hold on tight! Sloppy = good.

For the fried egg

Actually, you can scramble the egg if you prefer. Also, cook the yolk to whatever level of doneness you want. Runny to cooked through, it’s up to you.

Be gentle with the egg and when you’re flipping the sandwich. You don’t want to break that yolk!

For the bread

I prefer Texas toast as the bread for grilled cheese. It’s thicker and doesn’t squish down completely flat like regular sliced bread. However, I didn’t have Texas toast this time.

Sourdough, rye, just about any bread is good to make grilled cheese out of.

The best cheese

I used Colby, Pepper Jack, and mozzarella cheese. Again, use your favorite or what you have in the fridge.

Equipment

Ingredients

  • 4 large eggs
  • 4 slices bread I prefer Texas toast
  • 4 slices cheese I used Colby Pepper Jack and Mozzarella
  • 4 slices bacon cooked crisp
  • 1 medium avocado sliced
  • 2 tablespoons butter more if needed
  • salt and pepper to your taste

Instructions

  • In a frying pan, melt a little butter over low heat.
  • Add the eggs and fry eggs so the yolks are cooked how you like them. Add salt and pepper to taste. Once done, remove from the pan.
  • Butter one side of each piece of bread. In a separate frying pan on medium-LOW heat, add a slice of bread, buttered side down. (This sandwich has so much going on I did one at a time.)
  • Add a slice of cheese.
  • Top with two fried eggs, bacon, and avocado slices.
  • Top avocado with a slice of cheese.
  • Top with another piece of bread, buttered side up.
  • Cook until cheese is melted and bread is golden brown on both sides.
