Ingredients

  • 1 cup coconut shredded
  • 2 cup *chocolate graham cracker crushed into crumbs
  • 1 and ½ cup pecans or walnuts, chopped
  • 1 and ½ cup granulated sugar
  • 3 medium egg whites
  • 1 medium whole egg
  • 1 pie crust homemade or bought

Instructions

  • Preheat the oven to 350°F.
  • In a medium-size bowl, combine the coconut, chocolate cookie crumbs, pecans, and sugar in a medium bowl.
  • Mix in the egg whites (do not beat them first) and whole egg (beat it first)
  • Pour the filling into the unbaked pie shell.
  • Bake for 35 to 40 minutes at 350℉.
  • If the edges of the pie crust begins to brown too much, cover with foil. (Mine did not.)
  • The edge of the pie with get lightly browned but the middle may still look shiney and moist. That's okay it will set after cooling.
  • Cool on a wire about 45 minutes.
  • Store any leftovers in an airtight container.
  • The pie will keep for about 3 days.

Notes

For the crackers, you can use chocolate graham crackers, chocolate cookies, or chocolate animal cookies. You can even use Oreo sandwich cookies if you prefer.
