I really wanted something quick and easy when I thought of these Three Ingredient Peanut Butter Blondie Recipe. Then I wondered how many other recipes I could make with only three ingredients.
I like to challenge myself with totally random and odd goals. For instance, I’ve had a life-long goal of emptying the dishwasher or folding clothes in five minutes or less. And, because running 100 miles a month is so 2014, my goal this year is to run 130 miles a month. Why do I do this to myself?

Three Ingredient Peanut Butter Blondie Recipe
There’s been a long debate about the difference in blondies and brownies. Years ago when I took a baking class, the teacher told us brownies have cocoa or chocolate. Blondies are exclusive of chocolate except chocolate chips, but no chocolate in the batter.
And, blondies loaded with peanut butter are killer.
And easy.
And will disappear before your eyes.
Coincidently, they’re also gluten-free.
I prefer a soft texture in blondies. I cooked my Three Ingredient Peanut Butter Blondie Recipe in a 9 inch spring-form pan for 25 minutes at 350º F. If you like a more crispy texture, bake for 30 minutes. Note, times will vary with a different size pan.
This batter is really thick, I used a mixer to combine my ingredients. It would be possible to combine by hand, but really, I’m a wimp. I love my mixer.

- 2 cups peanut butter
- 2 cups granulated sugar
- 2 large eggs.
- *optional drizzle 1/4 cup peanut butter
Instructions
- Preheat oven to 350 degrees F.
- In the bowl of a mixer, add all ingredients.
- Beat until smooth.
- Pour into a 9 inch round or square pan that has been sprayed with non-stick oil.
- Bake at 350 degrees F 25 minutes for a softer blondie, 30 minutes for a more crisp texture. Cool on a wire rack.
- For optional drizzle, heat 1/4 cup peanut butter in the microwave 20 to 30 seconds until warm. Stir until smooth. Using a fork, drizzle over blondie. Serve warm or at room temperature.
