3 Ingredient Blueberry Puff Pastry Cobbler

  1. If you use frozen blueberries, there’s no need to thaw them. Sprinkle the sugar over the frozen berry and proceed with the recipe.
  2. You may use the pie crust instead of the puff pastry.
  3. Try 1/2 teaspoon lemon zest with the berries for a bright flavor.
  4. Whipped cream or ice cream adds a nice texture and flavor contrast to the tart berries.

Servings: 6 servings

Ingredients

  • 2 cups blueberries
  • 1/2 sheet puff pastry
  • 1/4 cup sugar

Instructions

  • Preheat oven to 400 degrees F.
  • I inverted my pan on the puff pastry sheet and traced around the pan. The pastry then fits perfectly over the berries.
  • Set the pastry aside for now.
  • Place blueberries in your baking vessel. I used a shallow cast iron pan that is approximately 5 inches by 4 inches.
  • Sprinkle sugar over berries and allow to sit for 10 minutes.
  • Spread the puff pastry over the berries and cut two or three slits in the middle.
  • Place the dish on a cookie sheet or pizza pan that has at least a 1-inch side to catch any bubbling over.
  • Bake the cobbler for 30 to 35 minutes or until the top is browned.
  • Serve hot with vanilla ice cream.

  5. I have searched locally and internet with no luck. Can you halp? My father had a bakery until his death in 1966. One of his products was a date/net strudel. I am 86 and its getting close to “checkout” time. I had hoped to find a date’nut strudel but so far no luck. Dad’s date/nut strudel was a puff dough. Inside was a crushed date mixture wth chopped nuts (walnuts or pecans). Would you PLEASE e-mail me if you know how/where I can find such? Thanks to you, Bob Bucherf

    1. Sounds like you are describing a baklava… a Greek dessert with puff pastry and a sweet nut and date filling or a variation of it. GOOD LUCK

    I added a little lemon juice, cinnamon, and a little butter on top of berries before placing pastry, and baked individually servings in ramekins. Delicious!!

  7. I would still just have to add some lemon juice and nutmeg, but I love the idea overall. I just might try it very soon–I still have some of last year’s blueberries in the freezer and this year’s are already on their way!
