Instructions

  • In a saucepan over medium heat, combine all ingredients except the vanilla and butter. Stir constantly with a whisk until thickened. This will take 6 to 10 minutes. When it begins to thicken, stir in the butter and vanilla. Remove from the heat and stir until smooth and glossy.
    1 and ½ cups Coca-Cola, ¼ cup unsweetened cocoa powder, ⅓ cup brown sugar, ¼ cup cornstarch, 1 teaspoon vanilla extract, 4 tablespoons butter
  • Pour into the baked and cooled pie crust. Allow the pie to cool on the countertop. Once cool, cover and refrigerate until chilled through.

For the chocolate ganache

  • Place the chocolate chips and cream in a microwave-safe bowl. Place the bowl in the microwave for 45-second intervals, stirring after each increment. Repeat until the chips are melted and the mixture is creamy and smooth.
    2 cups semi-sweet chocolate chips, ½ cup heavy cream
  • Allow the ganache to cool for five to ten minutes before spreading it on top of the refrigerated pie.
  • Top the pie or each slice with a dollop of whipped cream and a red cherry. Store in the refrigerator.
