Angel Food Cake Berry Parfait

This parfait is made by layering soft angel food cake pieces with berries and a whipped creamy layer. Berries can be fresh or thawed from frozen, but extra liquid should be drained. (I much prefer fresh berries!) Build the layers just before serving to prevent the cake from becoming soggy.

We like this recipe because it is easy to adjust and hard to mess up. It works well for last-minute guests or a simple family dessert. Chill the glasses first so the layers stay cool longer.

Tips and Subs

Use a store-bought cake to save time. Homemade cake works too if you already have it.

You can also use pound cake instead of angel food cake.

Cut everything evenly so layers look clean.

If berries are very tart, let them sit with a small amount of sugar for a few minutes.

These parfaits are a great addition to your Memorial Day spread.

Yogurt can replace some of the cream layer for a lighter texture.
