We typically don’t have time to do a big meal or grill much during the week. I like to plan a Sunday Grilling Menu every week and I cook extra for later in the week. I almost always grill extra chicken breast if we grill anything. You can do so much with grilled chicken. We had a lot of the stuffed pork loin and made sandwiches and quesadillas with it. Sometimes, I enjoy the Encore Dishes better than the main dish, as was the case with the quesadillas.
My goal when I began this blog was to do a weekly meal plan for you. Having no content as back-up it was very difficult to do. I’ve gotten away from that plan and mostly share special occasion meals with you. If you scroll to the bottom of the post, however, I do usually try to offer suggestions for what to serve with the posted item.

I just realized today that I didn’t post the Father’s Day Menu we had. We had it for Father’s Day, but you can have it any time, obviously. Wesley, Lincoln, Ryder and I each chose one item for this menu. Can you guess what we each chose?
