Ingredients

  • 2 and ยฝ tablespoons vegetable oil divided
  • 1 pound ground beef 453 g
  • 1 medium white onion
  • 1 teaspoon minced garlic
  • 1 ยฝ cups veggies of choice, carrot, broccoli, bell pepper (7.05 oz | 200 g)
  • 2 large eggs beaten
  • 3 cups cooked rice 1 lb | 453 g

Teriyaki sauce

  • ยผ cup soy sauce 2.70 fluid oz | 80 ml
  • ยผ cup brown sugar 3.73 oz | 106 g
  • ยฝ teaspoon ginger minced
  • ยผ teaspoon white pepper
  • 1 teaspoon cornstarch
  • ยผ cup water 2.02 fluid oz | 60 ml

Instructions

  • Heat a large non-stick skillet on medium high heat with 1 tablespoon of oil. Sear beef, onion and garlic until beef is browned. About 4-5 minutes. Remove and set aside.
  • Add 1 tablespoon of oil in the skillet. Turn to medium heat. Saute veggies until tender. About 3-4 minutes. Remove and set aside with the beef.
  • Add ยฝ tablespoon of oil in the skillet and scrambled eggs into tiny pieces.
  • Teriyaki sauce: Combine all ingredients in a bowl.
  • In a large bowl or directly in the skillet, combine rice, veggies, beef and sauce. Stir fry in the skillet for 1-2 minutes.
  • Garnish with green onions and serve.
