Even though it’s cold, I ran across a recipe similar to these scallops and just had to try it. I altered it slightly, that recipe called for fish. I found these scallops at Sam’s that I wanted to use. Serve it with rice unless you’re cutting back on carbs.

Tangy Teriyaki Scallops with Pineapple Mango Relish

You’ll find the tropical fresh fruit a light and refreshing accompaniment for the delicate scallops. For this recipe, I used the small bay scallops, but sea scallops will work too. Use what’s available to you or what you prefer. I love both bay and sea scallops and usually purchase what is freshest at my grocer.
This recipe has a soft fleshy texture and delicately mild sweet flavor. This texture and flavor combo makes this easy to prepare recipe a favorite!

Ingredients

  • 1 pound scallops
  • 1/2 cup thick teriyaki glaze like Kikkoman
  • 1/3 cup orange juice
  • 2 Tablespoon agave nectar
  • 2 teaspoon canola oil
  • 1 teaspoon freshly squeezed lemon juice
  • 1/4 teaspoon fresh minced ginger
  • salt and pepper to taste

For Relish

  • 1/2 cup diced pineapple
  • 1/2 cup diced fresh mango
  • 1/4 cup diced tomato
  • 1 Tablespoon thinly sliced green onions
  • 1 Tablespoon diced fresh jalapeno
  • 1 teaspoon fresh cilantro minced

Instructions

  • Combine all scallop ingredients and whisk. Chill until needed.
  • Pre heat grill or grill pan to high. Pat scallops dry with a paper towel then lightly salt and pepper. Grill 2 to 3 minutes then turn. Grill on second side 2 to 3 additional minutes add teriyaki sauce the last minute. Serve plain or over rice with Pineapple Mango Relish.

For Relish

  • Combine all relish ingredients. Cover and refrigerate until needed. Serve over Teriyaki Scallops
