The epitome of a decadent brunch, eggs benedict can easily be made at home. This classic recipe for both Hollandaise sauce and poached eggs can easily be mastered and enjoyed without having to go to a restaurant. I finally took the plunge of poaching eggs and making blender Hollandaise sauce and neither technique is as difficult as anticipated.

Variations of the classic are easy. Cooking is about making it your own. Try changing up the traditional English muffin to a Southern buttermilk biscuit, hash brown potatoes or a crusty crescent. How about using bacon, pulled pork, salmon, or chorizo sausage instead of Canadian Bacon? You can even fry or hard boil the eggs. For me, Hollandaise is a staple, but if you’re adventurous a honey lime sauce, herb and garlic hollandaise sauce, or Avocado Hollandaise would raise the bar.
