  • 1 small head cauliflower cut into bite-size florets (about 4 cups | 17.6 oz | 500 g)
  • 1 tbsp olive oil
  • ยฝ tsp garlic powder
  • Salt to taste
  • ยพ cup buffalo wing sauce 6 fl. oz | 180 ml
  • 8-10 large lettuce leaves like romaine or butter lettuce
  • ยฝ cup carrots shredded , 1.76 oz | 50 g
  • Optional: vegan ranch or yogurtdressing, for drizzling

Instructions

Roast the Cauliflower

  • Preheat the oven to 425ยฐF (220ยฐC).
  • Toss cauliflower with olive oil, garlic powder and a pinch of salt.
  • Spread on a baking sheet and roast for 20 minutes, turning halfway through.

Add the Buffalo Sauce

  • Remove cauliflower from the oven, toss with buffalo sauce and return to the oven for 5 more minutes to caramelize slightly.
