Cookie Butter Chess Pie is creamy, rich, and filled with the warm flavor of spiced cookie butter. It bakes into a smooth, custard-like filling thatโ€™s classic to any good chess pie. The best part is how simple it is to make with basic pantry ingredients and a store-bought or homemade crust.

Are you familiar with chess pies? Chess pieโ€™s texture is similar to the goo found in pecan pies or like underbaked brownies. Itโ€™s thick, sweet, and smooth with a slightly crisp top. I have shared chocolate chess pieApple Chess Pie with Streusel Top, and lemon chess pie. Also, Buttermilk pie and Sugar pie are similar to chess pie.

Cookie butter is a spread made from Belgian cookies. Itโ€™s smooth and creamy like peanut butter but doesnโ€™t contain nuts. Flour, sugar, fat, and cookie crumbs are combined to form a paste.

The most common brands youโ€™ll see for cookie butter are Biscoff and Specaloos. Specaloos is Trader Joeโ€™s brand. You can get Biscoff at Walmart, Target, and almost any major grocery store, or linked below at Amazon.

Cooking tips and substitutions

Youโ€™ll need to allow time for the Cookie Butter Chess Pie toย cool and set,ย which makes this aย great make-ahead recipe. I actually refrigerate mine.ย Nutella Chess Pie also makes a quick and easy dessert with a chocolate-hazelnut flavor.

Cookie Butter Chess Pie can be made 1-2 days in advance. In fact, I recommend making it at leastย 1 day in advanceย so it has lots of time to chill. Just cover it with plastic wrap or foil and refrigerate it. It slices much cleaner when cool.

Warm each slice for a few seconds in the microwave and add a small spoonful of whipped cream, cookie butter ice cream, or vanilla ice cream on top. It softens the filling slightly and gives each bite a smooth finish. Ice cream or whipped cream also helps balance the richness.

You can also substitute peanut butter for a rich peanut butter chess pie.

Bake until the center is set but still slightly soft; it firms up as it cools.

Use room-temperature eggs for a smoother filling.

If Cookie Butter is too firm, warm it slightly before mixing.

A pre-made pie crust saves time, or you can make your own. I like this Never Fail Pie Crust and this Coconut Oil Pie Crust.

Make sure the filling is well mixed before pouring it into the crust to help it bake evenly and set to a creamy texture.

We like to serve this pie slightly warm with a small spoon of whipped cream or a drizzle of melted cookie butter. It adds just the right touch of sweetness.๐Ÿ˜‹
