Tasty Chocolate Stuffed Strawberries
Strawberries are not only beautiful with their bright red color but a nutritional powerhouse. Nutrient dense and low in calories, they’re an excellent source of vitamin C, manganese, folate, and potassium. They’re also high in fiber and have no cholesterol.
And, they’re delicious!
I paired healthy (strawberries) with a little decadence (chocolate). It’s all good.
Tasty Chocolate Stuffed Strawberries
- I like to make my ganache first and while it’s cooling I prep the strawberries.
- I always get questions about heavy whipping cream. (see an example here) Heavy Cream and Heavy Whipping Cream are the same things. It’s essentially milk with a high-fat content. When whipped it will double in size and is referred to as Whipped Cream. (The ready-made version of whipped cream is Cool Whip.) You will not whip the cream in this recipe.
- Instead, for this recipe, you will warm it to just before the boiling point. When bubbles form at the edges with small bubbles in the center is the perfect time to remove it from the heat source. Immediately pour the cream over the chopped chocolate.
- Another tip, chop your chocolate bar into small pieces so that the hot heavy cream will melt it quicker.
- You’ll allow this mixture to sit for a couple of minutes, then stir it together until the mixture is smooth. Chill on the countertop or the refrigerator until cool.

- Next, prep your strawberries. Wash the strawberries and allow them to dry or pat them dry.
- Slice off the end evenly so that the strawberries will sit flat. Next, slice off the stem and hollow out the center. I try to take out just the white area as to not waste good, juicy strawberry.
- Spoon or pipe the chocolate mixture into the strawberry.
- Finally, decorate if desired. You can decorate with sprinkles, mini-chocolate chips, or mint leaves.
What chocolate is best?
I like to use Ghirardelli Chocolate Intense Dark Bar, Evening Dream 60% Cacao, 3.5-Ounce Bars. It has an impeccable chocolate intensity, with a rich, round flavor. It’s usually found on the baking aisle in your supermarket.

- 12 large strawberries
- 1/3 cup heavy whipping cream
- 3.5 ounce dark chocolate I used Ghirardelli's Intense Dark 60% Cacao
Instructions
- Chop chocolate into small pieces and place in a bowl.
- In a saucepan, heat the heavy cream until it just starts to simmer. Remove from heat, pour over the chocolate chips and let sit for a few minutes.
- Slowly stir the cream and chocolate together until it's completely blended and glossy.
- Place in the fridge, stirring every 5 minutes or so, until the ganache has thickened and cooled completely.
- While the chocolate is cooling, cut the very tip off so that the strawberries will stand up. Then, hull the strawberries.
- Add the chocolate to a piping bag or ziptop bag and pipe into the hulled strawberries. You can also use a teaspoon to dip and fill if you don't want to use a bag.
- Store in the refrigerator if not serving immediately. You can store in the refrigerator up to 12 hours before serving.
