I made Mini Taco Nachos!! I can’t even tell you how excited I am about the Super Bowl. I love football and I love the Super Bowl. Even with both of my favorite teams out of the running, I’ll still be watching the big game. I’m not one of the ladies that likes the Super Bowl just for the commercials or for the party. Although, I think that’s fine and I like those as well. I really like the game. It’s like chess with the coaches making the moves. Coach A does this, Coach B does that and on and on for 60+ minutes. But, its real life and its way more exciting because you never know what craziness will happen.
It’s also bitter-sweet because football will be over until next September. It’s a good thing that Suits starts back next week so I’ll have something to watch. Is it crazy that I’ve watched every single episode three times? #soobsessed
I digress.
For the last few years, I’ve left the party early to make sure the boys are in bed and ready for school. That’s really no fun. When the Giants came back in the last minutes for their first Super Bowl win, I was at home screaming by myself.
That’s not going to happen this year! The boys are big enough to stay up a little later and/or put themselves to bed if needed so Mommie can party watch the game!

Mini Taco Nachos
These Mini Taco Nachos are a new edition. I thought this was a fun idea to build on an already tasty (and convenient) snack.
I tested this recipe for the last playoff games. I took an easy prepared mini tacos and layered traditional nacho ingredients on them. They were a huge hit so I decided to make them for our Super Bowl party.
They’re crispy, cheesy and full of spice and flavor.
Mini Taco Nachos are kind of non-recipe recipe. I placed the José Olé mini tacos in the bottom of a cast iron skillet. I then topped my Mini Taco Nachos with Mexican seasoned ground turkey, black beans, corn, shredded cheddar cheese, and jalapenos. I put a dollop of Greek yogurt on just before eating and dipped each one in salsa. The beauty of these is each guest can add their favorite toppings.

- 2 cartons Jose Ole Nacho Bites
- 1 pound ground turkey cooked
- 1 packet taco seasoning
- 2 cups cheddar cheese shredded
- 1 can black beans rinsed, drained and heated through
- 1 cup salsa your favorite
- *optional - green onion slices sliced black olives, diced tomatoes, sour cream or greek yogurt or any of your favorite nacho toppings
Instructions
- Heat Jose Ole Nacho Bites according to package directions. Layer on toppings of your choice and heat under broiler until hot and cheese is melted.
- Serve with your favorite toppings - green onions, sour cream, black olives, tomatoes

I am so with you, Paula! I live for football season and I watch every single minute I can, my team or not! I love it and we are definitely mourning the fact that we have to go MONTHS without it. 🙁 It’s my fave sport, by far!! College and NFL! I will celebrate the last game of the season and drown my sorrows in a big pan of nachos though! Lol! These look so good, I’m even craving them for breakfast right now!
