Ingredients

Chicken

  • 2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon Avocado oil coconut oil, or olive oil
  • 1 teaspoon paprika
  • 1 teaspoon fresh garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Bang Bang Sauce

  • 1 cup mayonnaise
  • ½ cup sweet chili sauce I like these brands: La Choy, Kikkoman, and Frank’s
  • 2 tablespoons honey

Instructions

  • In a large bowl, combine the chicken chunks, oil, paprika, garlic powder, salt, and pepper. Toss to coat the chicken.
    2 pounds boneless, 1 tablespoon Avocado oil, 1 teaspoon paprika, 1 teaspoon fresh garlic minced, 1 teaspoon salt, ½ teaspoon black pepper
  • Thread 4-5 chicken cubes onto each.
  • In a small bowl, combine the mayonnaise, sweet chili sauce, and honey. Mix well. This will make about 1 1/2 cups bang bang sauce.

  • Pour half of the sauce into a separate bowl and refrigerate to use after the chicken has been cooked. Brush the rest of the sauce evenly over the chicken.
  • Add the skewers to the grill or grill pan.
  • Cook for 10-12 minutes, flipping halfway. Chicken is fully cooked when it reaches an internal temperature of 165°F.
  • Transfer the skewers to a plate. You can drizzle the reserved bang bang sauce over the skewers or serve it as a dip.
  • Note: For the sauce in the photos, I only used 1/4 cup of mayonnaise. I’ve since made these a couple more times and like the sauce with more mayonnaise. The recipe card reflects my preference of more mayonnaise with is much lighter in looks than the sauce on the photos.
