Ingredients

  • 2 medium red onions sliced, or white or sweet onion
  • 2 tablespoons vegetable oil or butter
  • teaspoon each salt and pepper
  • 1 tablespoon red wine or red wine vinegar
  • 4 slices bread any thick sliced
  • 4 tablespoons butter or mayonnaise
  • ¼ cup bbq sauce your favorite
  • 1 and ½ cup barbecued pulled pork if cold warm in microwave or skillet
  • 4 slices sharp cheddar cheese or your favorite melty cheese
  • ½ tablespoon bbq seasoning optional
  • 2 tablespoons jalapenos diced, optional

Instructions

Caramelize the onions

  • Slice the onions and remove the root. In a medium skillet, add 2 tablespoons oil (or butter). Heat over medium-low heat until melted and sizzling.
  • Add the onions and cook, stirring every few minutes to prevent them from sticking and cooking too much on one side. Cook until blonde-colored, usually about 15–20 minutes. (Reduce the heat if needed to keep from cooking too fast.) If the onions begin to stick, add the wine and deglaze the pan. For this sandwich, you can cook them as soft as you want or leave them a bit firm.
  • Remove them to a plate until your ready to assemble your sandwich.

For the Grilled Cheese

  • While butter is melting add one slice cheese onto one piece of bread. Top with pulled pork, onions and other slice of cheese.
  • Add to pan of melted butter and cover the pan for 5 minutes to help melt the top layer of cheese. Take off the lid, top with other slice of bread and let cook until the bottom slice of bread is toasty and brown.
  • Before flipping add in another tablespoon of butter (if needed) and let it melt. Once melted gently flip the sandwich and cook until brown on the other side.
  • Cut in half and enjoy!
