Grilled cheese and I go way back! Yes, it’s a relationship that’s endured for years and years! My mom worked but cooked every night. We lived ‘in the country’. There was no running to get take-out if she didn’t feel like cooking. However, she cooked almost every night. I don’t know how it evolved but on Sunday night after church, we had grilled cheese sandwiches.

I still love grilled cheese sandwiches and could eat one every day. However, I stepped away from the slice of processed cheese and made grilled cheese sandwiches with a variety of different cheeses. Grilled cheese is excellent with Pimento Cheese or even Cream Cheese like my Grilled Cheese Breakfast Sandwich. you’ll LOVE this Mozzarella sandwich! Of course, you can’t go wrong with BBQ Pulled Pork Grilled Cheese either!

I have taken your favorite childhood traditional grilled cheese sandwich up about ten-fold into a gourmet grilled cheese sandwich filled with brie cheese and a slightly sweet fig jam. I especially like this combination of a mellow, creamy texture and taste of brie. Plus, fig preserves add a nice sweetness, and the crunch from grilling makes it the ideal grilled cheese.

HOW TO MAKE BRIE FIG GRILLED CHEESE

Preheat the griddle over medium heat. (I love this griddle skillet.) Generously add butter to one side of both slices of bread. On one of the bread slices, add fig preserves or any spreads to the opposite side of the butter. Place the bread butter-side-down onto the skillet bottom and add brie cheese. Place the other slice of bread that is already buttered on top, with the butter side up. Grill until lightly browned and, with a large spatula, carefully flip over to brown the other side. Flip over again if the cheese has not yet melted.

And there you go. The result is a finger-linkin’, outrageous meal in minutes!

Ingredients

  • 3 ounces brie cheese sliced (about 2 to 3 oz or enough to cover 2 bread slices)
  • 2 Tablespoons fig preserves
  • 4 slices Texas toast or other thick, dense bread
  • 2 tablespoons butter

Instructions

  • Heat griddle to med-high. Butter one side of each piece of bread. Layer cheese on the un-buttered side of 2 slices of bread.
  • Spread fig preserves on un-buttered side of other 2 slices of bread and sandwich together.
  • Place on griddle pan and grill until golden brown, turn and repeat.

    Thanks so much for this recipe. I, too, have walked away from heavily processed cheeses, so this grilled cheese sandwich is right up my alley. It tasted so good and was very easy to make.
