Do you ever look back at something that just happened this morning and think, that was today? seems like days ago. I sat down to write this post, looked at this sandwich, and realized it’s what I had for brunch but it seems like a very long time ago.

Let me tell you, I am tired! Stressed!
I’m so glad it’s Friday.
Can I have that martini intravenously?
The problem is saying ‘No’.
It’s a common characteristic of Motherhood.
We feel it’s our duty to take care of and make everyone happy.
I overfilled my plate!
It stresses me.
And, on a completely different note, Ryder had a pair of underwear in his backpack.
They were his, I recognized them.
Yes, I checked to see if he had underwear on.
He did.
Strange. Mysterious. Scary!!

Grilled Cheese Breakfast Sandwich

On to the sandwich, I don’t know how or when I started making this sandwich but it’s been a very long time. I love grilled cheese sandwiches and cream cheese. This grilled sandwich with sweet jam and cream cheese was like the perfect marriage.
It’s great for breakfast, or a quick snack any time of day. Added bonus: easy enough the kids can make!

For the bread

I prefer Texas toast as the bread for grilled cheese. It’s thicker and doesn’t squish down completely flat like regular sliced bread. However, I didn’t have Texas toast this time.

Sourdough, rye, just about any bread is good to make grilled cheese out of.

Ingredients

  • 2 slices bread I like thick Texas toast* for this
  • 2 Tablespoon cream cheese softened
  • 1 Tablespoon jelly your favorite flavor (I like strawberry or blackberry best)
  • 1 tablespoon butter

Instructions

  • Heat a skillet pan on med heat.
  • Spread softened cream cheese on one side on both slices of bread. Spread jelly over cream cheese on one of the slices.
  • Make a sandwich and press the edge slightly to seal jelly inside. Spread butter on the outside of bread slices.
  • Grill about 2 minutes or until bread is golden, turn and toast the other side. Remove from heat, slice, and serve immediately.

Notes

*You can lower the fat and calories in this by using light bread, low-fat cream cheese, low-calorie jelly, and little or no butter or replace butter with vegetable cooking spray.Recipe from Paula @CallMePMc.com All images and content are copyright protected.
