You may remember another Breakfast Grilled Cheese sandwich that I shared, Double Fisted Fried Egg Bacon Avocado Grilled Cheese Sandwich. It was so well received by my family and readers that I wanted to make another breakfast sandwich.

This cheesy goodness has become a family favorite. It’s the boys’ go-to meal for breakfast and after-school snack because it’s quick and easy to make. They can make it without supervision. Also, this sandwich is packed with protein and for growing teenage boys I overlook the butter component.

Breakfast Grilled Cheese Recipe

Combining sausage with fluffy scrambled eggs is a game-changer for grilled cheese. It’s a keeper if you need a heartier breakfast.

I used Texas toast since it stands up good for grilling, but sweet rolls would be a great alternative if you don’t have sliced bread.


 Breakfast Grilled Cheese

I made this Breakfast Grilled Cheese Recipe with Texas toast bread, a layer of cheese, a large round slice of sausage, and two scrambled eggs. For the cheese, I used Cheddar Colby. However, you can use whatever cheese you have on hand or that your family prefers. As well, you can fry the eggs if you prefer.

All of this goodness is grilled to crispy, buttery perfection.

The flavors are wonderful. Additionally, the textures of fluffy and creamy eggs, gooey and melty cheese, spicy and chewy sausage make for a wonderful meal.

  • 2 large eggs
  • 2 slices bread
  • 2 slices cheese Colby, cheddar
  • 1 - 2 large sausage patties cooked
  • 2 tablespoons butter more if needed
  • salt and pepper to taste


  • In a frying pan, melt a little butter over low heat.
  • Add the eggs to a bowl and whisk. Add to pan and cook how you like them. Add salt and pepper to taste. Once done, remove from the pan.
  • Butter one side of each piece of bread. In a separate frying pan on medium-low, add a slice of bread, buttered side down. Top with one slice of cheese.
  • Top with scrambled eggs, cooked sausage, another slice of cheese, and second slice of bread with the buttered side UP.
  • Cook until cheese is melted and bread is golden brown on both sides.
  • Serve immediately.
