Peanut Butter Cup Peanut Butter Blondies

I do have a specialty. Ask anyone that knows me and they’ll tell me that I love making desserts. I also love staying home and being anti-social, but that’s another story for another day.

If my family could live off desserts, it would be all I cooked. Unfortunately, society frowns on cookies for breakfast, brownies for lunch, and cake for dinner.

Fortunately, now that I have this site, I have an excuse to indulge in desserts. Loaded peanut butter cup peanut butter blondies with peanut butter frosting is this week’s treat. And the cool thing about these, I made them, kept two for myself and gave the rest to my neighbor. Sharing is fun too! 

Ingredients

  • 2 cups sugar
  • 2 cups all-purpose flour
  • 2ย largeย eggs
  • 1 teaspoon baking soda
  • 1 cup plain Greek yogurt
  • โ…” cup creamy peanut butter
  • 1 cup butter
  • 1 cup water
  • 2 cups peanut butter cups
  • ยฝย cupย butter
  • โ…” cup creamy peanut butter
  • 6 tablespoon heavy whipping cream
  • 2 and ยฝย cupsย confectioner’s sugar
  • 1 teaspoon vanilla

This recipe is a gooey treat everyone will love. Even my neighbor who doesn’t like sweets couldn’t stop eating these decadent blondies.

These blondies have is made with a fluffy peanut butter cake is studded with peanut butter cups and draped in a creamy peanut butter frosting. It’s sweet without being overly sweet. The added surprise of biting into a chocolate peanut butter cup makes every bite a new experience. The peanut butter glaze is my favorite part. It’s thick and creamy and adds the perfect topping to this dessert.

FOR THE CAKE

Instructions

FOR THE CAKE

  • Combine sugar, baking soda, and flour in a bowl.
  • In another bowl, whisk eggs then add sour cream and whisk to combine.
  • In a small saucepan, combine peanut butter, butter, and water. Bring to a boil.
  • Stir peanut butter mixture into flour mixture. Stir to combine.
  • Add egg mixture to flour mixture and stir to combine.
  • Pour batter into a 13×18 inch sheet pan (or two 9×13 inch cake pans) that has been sprayed with non-stick spray
  • Evenly sprinkle chopped peanut butter cups over batter.
  • Bake for 18 to 20 minutes or until done. Cake is done when a wooden pick inserted in the center of the cake comes out clean or with dry crumbs.

FOR THE FROSTING

  • Combine butter, peanut butter, and milk in a saucepan. Bring to a boil. Stir constantly.
  • Add powdered sugar and whisk to combine.
  • Remove from heat and stir in vanilla.
  • While cake is hot and frosting is hot, pour frosting over cake.
  • Serve warm or allow to cool.
