My scrumptious, colorful Cobb Salad recipe is full of potatoes, bacon, avocado, tomatoes, cheese, and more! It’s a fast, fresh meal idea for any day of the week.

WHAT EXACTLY IS A COBB SALAD?

A Cobb salad is a main-dish American garden salad typically made with chopped salad greens, tomato, crisp bacon, boiled, grilled or roasted chicken breast, hard-boiled eggs, avocado, chives, Roquefort cheese, and red-wine vinaigrette.

WHERE DID IT GET THE NAME?

The salad was a signature dish at the Brown Derby restaurant in Hollywood, which opened in 1929. I read Robert Kries, executive chef,  created the salad and named it after the restaurant’s owner, Robert Cobb. But, I also read another theory, Robert Cobb invented the salad one night for himself and a friend.

Regardless, we’re fortunate because this salad is amazing!

Best Cobb Salad with Buttermilk Garlic Dressing

First, for my salad, instead of chicken, I opted for baby potatoes from the Little Potato Company (not a sponsored post). You can find them in the produce department alongside other potatoes. These new potatoes are packaged in a microwavable package for easy cooking. However, you can certainly use regular potatoes or baby potatoes not the packaged, microwavable ones. If you large potatoes, cut into 1-inch cubes before boiling until fork tender. Season as desired.

In addition, for the bacon, I cooked it on a rack in the oven (400 degrees for 20 minutes). For easy cleanup, coat the rack with nonstick spray and line the baking sheet with foil.

Although red wine vinaigrette is the traditional Cobb salad dressing, I chose this Buttermilk Garlic Dressing. It’s creamy, bold, and easy to make. As well, it compliments the salad ingredients beautifully.

Furthermore, any lettuce will be tasty. You may want to try Romaine, butter, or iceberg.

Finally, I used Romaine lettuce, pepper jack cheese, cheddar cheese, avocado, boiled eggs, and grape tomatoes on my salad.

Presentation

I didn’t arrange the ingredients in striped layers over the top of the lettuce the traditional way for a Cobb salad. Instead, I arranged them in an abstract artful way over the lettuce on a large platter.

Ingredients

  • 1 pound microwave ready baby potatoes any flavor
  • 5 slices thick cut bacon cooked and chopped
  • 4 large eggs cooked and sliced
  • 1 head lettuce Romaine, iceburg, your choice
  • ½ pound grape tomatoes halved
  • 1-2 large avocados sliced
  • ½ cup cheese grated, any kind

Instructions

  • Make Buttermilk Garlic Salad Dressing and refrigerate.
  • Set a medium saucepan filled 2/3 of the way up with water over high heat and bring water to a boil. Add eggs with shells still on and cook for 10 minutes. Cool then shell and slice into quarters.

  • Cook bacon until crisp and chop. (Read: Easiest way to Cook Bacon)
  • Meanwhile, cook potatoes in microwave as per package instructions. Once removed from microwave add seasoning as instructed on package.

  • Pile lettuce onto a large platter. Arrange bacon, tomatoes, avocados, potatoes, and cheese over lettuce. Either pour on dressing or serve on the side.
