  • Tomatoes. I like in-season and vine-ripened as a first choice or Roma tomatoes.
  • Dukeโ€™s or Blue Plate Mayonnaise
  • Salt or Himalayan salt
  • Freshly ground pepper, emphasis on freshly ground, it makes a world of difference.
  • Cheez-Its cheese crackers. Goldfish or any cheese crackers will work.
  • Italian seasoning or fresh basil. Optional.

Tomato Cheez-its Cracker Salad

This salad is best if eaten immediately after making it.

The most important tip is to use a good quality mayonnaise like Duke’s or Blue Plate.

I like to lightly break the crackers but that’s optional.

You can add green or red onions or a chopped boiled egg to this recipe if you wish. I prefer to keep it simple.

Ingredients

  • 2 small (about 1 to 1 & ยผ cups) tomatoes vine-ripened or Roma tomatoes
  • ยฝ cup mayonnaise Duke's or Blue Plate
  • โ…› teaspoon salt
  • โ…› teaspoon black pepper Freshly ground is best
  • 1 cup Cheez-Its lightly crushed, or Goldfish crackers
  • โ…› teaspoon Italian seasoning or fresh basil, optional

Instructions

  • Wash and dry tomatoes. Remove the stems and seeds, then dice the tomatoes. Place on paper towels to drain for up to 10 minutes. (Sometimes I'm in a hurry and don't drain them for 10 minutes, but the salad is really better if you can drain some of the tomato juice out.)
  • Add the tomatoes, salt, pepper, and Italian seasoning to a medium bowl. (The Italian seasoning is optional. Honestly, sometimes I add it and sometimes I don't. You can also stir in fresh basil instead of the Italian seasoning.)
  • Stir in the lightly crushed Cheez-Its. Taste and add more salt and pepper, if needed. Serve immediately.
