Easy Chicken Pesto Flatbread is topped with chicken, fresh mozzarella, and basil pesto. It’s a great way to use leftover chicken or turkey. This is a fresh summer favorite that’s great for appetizers, lunch, or dinner. It’s a delicious combo and perfect weeknight meal that comes together in minutes.

Flatbread recipes can be prepared and cooked in just minutes which makes them ideal for college students.

This is a very versatile recipe. You can add a handful of spinach, grape tomatoes, or sliced zucchini to the flatbread pizza.

Additionally, you can use leftover chicken or turkey to make this. If you prefer, you can omit the protein altogether.

You only need a simple toaster oven to cook this meal!

TIPS FOR COLLEGE COOKING

Take advantage of the salad bar at your school cafeteria. Not only for salads, but many bars also have ingredients that you can get to make flatbread pizzas, sandwiches, etc.

You can use any cooked chicken. If you have access to a grill always grill extra chicken because you can use it for so many different meals. You can also cook chicken in the slow cooker for this recipe. As well, Tyson makes a grilled and frozen chicken that comes in a whole breast, sliced, or chopped. You can also use rotisserie or canned chicken, although canned chicken would be my last choice. As well, Birdseye has cauliflower ‘wings’ now that you can use instead of chicken.

I usually get flatbread from Amazon as well as the deli or bread section of the grocery store. (Did you know Amazon has a special Prime account for Students? Prime Student has all kinds of great deals, subscription service, free shipping, discounts on college essentials, music, and firestick deals for students.)

FLATBREAD ALTERNATIVES

In addition to Naan flatbread, you can use Pita, Chapati, Lavash, or tortillas.

As well, there are gluten-free flatbreads available like Casabi Artisan Flatbread.

Ingredients

  • ½ cup chicken cooked and shredded or cubed
  • ¼ cup basil pesto like this
  • cup mozzarella I used fresh
  • ½ tablespoon Everything Bagel Seasoning like this

Instructions

  • Preheat your toaster oven to medium.
  • Lay the flatbread on a sheet pan and top with pesto. Spread the pesto evenly over the surface of the flatbread.
  • Top with shredded or diced chicken or turkey.
  • Top with mozzarella.
  • Cook until cheese is melted and the flatbread is heated through and lightly browned around the edges.
  • Remove from the oven and sprinkle Everything Seasoning over the top. Serve immediately.
