Easy Buffalo Chicken Flatbread

My oldest son will be going to college soon. With that in mind, I’ve been thinking of easy recipes that he can make in his room while he’s living in the dorm. These recipes will easily carry over when he moves to an apartment. They’re all simple, easy, quick, and budget-friendly.

EASY BUFFALO CHICKEN FLATBREAD

I love how quickly I can make a snack or meal using flatbread. It’s perfect if you live in a small apartment or dorm. Plus, it doesn’t have to be heated or you can toast in a toaster oven in just a few minutes.

It’s quick, simple, and budget-friendly.

INGREDIENTS, TIPS

  • Chicken. For the thicken you can use any cooked chicken. If you have access to a grill always grill extra chicken because you can use it for so many different meals. You can also cook chicken in the slow cooker for this recipe. As well, Tyson makes a grilled and frozen chicken that comes in a whole breast of chopped. You can also use rotisserie or canned chicken, although canned chicken would be my last resort. I’ve also made this with leftover fried chicken strips and it was a hit with my boys. If you don’t do meat, you can use cooked cauliflower instead of chicken.
  • Bread. – I typically use naan bread from the grocery store. It’s either with the bread or at the deli section. (If you have access to Aldi, they usually carry it cheaper than anywhere else.) You can get naan in different sizes. You can also use small, pre-cooked pizza crust or flour tortillas. There’s also a lot of low-carb and gluten-free wraps and flatbreads like cauliflower crusts available now. One of my favorites is Joseph’s Lavish bread and Joseph’s pita bread which would make a good base for this flatbread pizza.

AND MORE…

  • Buffalo Sauce. Sweet Baby Ray’s is my favorite Buffalo wing sauce. It’s a little spicy, but not so hot it blows the top of your head off. I also found this sugar-free, low-carb buffalo sauce that’s amazing! There are a lot of Buffalo sauces available and it’s using found with the ketchup and bbq sauce at the store.
  • Cheese. As most of you know, blue cheese is traditionally associated with wings. However, blue cheese is an acquired taste, and if you’re not a fan skip it of substitute feta, goat, or your favorite cheese.
  • Green onions. Totally optional. You can also top it with sliced celery.
  • Seasoning. I used Everything Bagel seasoning. It’s a great all-purpose seasoning to have. You could omit or use ground black pepper. I find that this recipe doesn’t need salt. Buffalo sauce and cheese usually have enough salt for flavor.
  • Ranch. I drizzled Ranch dressing over my pizza after I took it out of the oven for extra flavor. And, can you really go wrong with Ranch dressing? (Tip – those little packets of sauce that you get at fast-food restaurants will come in handy for a lot of the recipes at College Student Recipes.)

My family wanted buffalo chicken pizza for the big games over the weekend. I didn’t want to get involved with making pizza dough. We found this flat bread recipe and it was just delicious. A big hit with the family. We will make this often.
