Loaded Keto Avocado Bacon Chicken Salad {ABC Salad} is packed with protein and nutrients. It’s low-carb, super simple, and quick to prepare especially if you have leftover grilled, baked, or rotisserie chicken.

LOADED KETO AVOCADO BACON CHICKEN SALAD or ABC SALAD
This is a quick salad to make for one or two for lunch. I use a rotisserie chicken but you can use any cooked chicken. Grilled chicken would be especially good. (Always, always cook extra chicken when you’re cooking. There are so many great recipes for it.)
This is also good with pasta mixed in for potlucks!
To make a prettier presentation than I did, you can present the salad in your avocado skins. If you using the avocado shells, squeeze lime juice over them as well as the avocado flesh so they don’t turn brown.
As well, you can easily double or triple to have more servings.

WHAT YOU’LL NEED
- Avocado. I make this for one, for my lunch, a lot of days and use half an avocado. This Avocado Saver is wonderful for storing the other half and keeping it from turning brown.
- Bacon. You can cook fresh or use store-bought bacon bits.
- Chicken. Cooked, cooled, and chopped or shredded.
- Green onions.
- Cilantro. Fresh!
- Lime. Zested and juiced.
- Dressing (mayonnaise, Greek yogurt, or sour cream). I don’t diet, nor do I do Keto. I just try to eat healthily. Therefore, I used a Chipotle Ranch Dressing (or link to my Homemade recipe here). It was out of this world! Honey Mustard Dressing (or link to my homemade Honey Mustard recipe) is delightful too!
- Salt and pepper. I just love Himalayan pink salt.
OPTIONS
- If you want more vegetables, you can serve this mixture over lettuce. I like the spring salad mix.
- As well, you can add tomatoes, cucumber, and/or chickpeas.
- And, of course, you can add cheese. Just about any cheese would be good with these ingredients and flavors.
- Another salad with some of the same ingredients and similar flavor that everyone loves is a Cobb Salad.
- If you’re not doing Keto, corn is a nice addition.
