Keto Muffuletta is a quick and easy grazing appetizer of cured meats, cheeses, olives, and giardiniera. They contain no carbs and are gluten-free.

You could also call these Antipasto Tacos.

I’m not on a low-carb diet, I run and it takes a lot of carbs for that. However, I have several friends that are and when entertaining recently I wanted nibbles that everyone could enjoy. The easiest way to do this over cocktails is with a charcuterie board. My Keto Muffulettas are an extension of the charcuterie.

I love that you can throw these together in minutes. They’re hearty, spicy, briny (from the pickled vegetables), and a whole lot of good!

One of the pros that I like so much about these is that you can easily improvise with this recipe. Choose ingredients that you have on hand and that fit your tastes. Therefore, if you don’t like pickled vegetables, you can easily substitute fresh. Not a fan of provolone? Use muenster instead.

WHAT IS GIARDINIERA?

Giardiniera originated by Italians as a way of preserving vegetables in vinegar. However, the Americanized version takes it a step further by then marinating the pickled vegetables in olive oil.

WHAT IS ANTIPASTO?

Antipasto is the traditional appetizer of a formal Italian meal. Furthermore, typical ingredients of a traditional antipasto include cured meats, olives, pepperoncini, mushrooms, artichoke hearts, various cheeses, pickled meats, and giardiniera.

HOW TO MAKE KETO MUFFULETTA

You can make these party snacks in advance and refrigerate them until you’re ready to serve.

First, on a clean work surface, lay a slice of salami, pepperoni, Proscuitto, then provolone. Next, top with Giardiniera, fold, and secure with a toothpick. 

They’re just that quick and easy to make.

Equipment

  • tooth picks or bamboo skewers

Ingredients

  • 12 slices salami
  • 12 slices pepperoni
  • 12 slices Proscuitto
  • 12 slices provolone
  • 1 cup picked vegetables

Instructions

  • On a clean work surface, lay a slice of salami, pepperoni, Proscuitto, then provolone.
  • Top with 1 tablespoon pickled vegetables.
  • Fold in half, like a taco, and secure with a toothpick or wooden skewer.
  • Cover and refrigerate until ready to serve.
