These Bacon Rotel Cups are simple to make, super yummy, and my go-to easy recipe for tailgating and entertaining. These crispy pastry shells are filled with melty cheese, salty bacon, and zesty tomatoes with a kick from green chilies. Then, they’re baked until golden and delicious.

Let me tell you a brief story before we get to it!

Ryder, my youngest son, adores our one-year-old Bassett hound. He really is helpful with her and wants to wake her every morning and feed her. This is great for me because I’m usually rushed fromย blogging, running, making lunches, and cooking breakfast. He’s not efficient at it, so I didn’t think much this morning when he was in her room, aka the laundry room, for a long time. When he did finally re-appear, he said, “Mommie, just in case I ever need to sleep there, did you know I fit perfectly on Summer’s bed?”

So, let’s talk about this fantastic recipe.ย No Fuss Bacon Tomato and Cheese Cups aka Bacon Rotel Cups. This truly is a no-fuss recipe. It’s not pretentious, it’s just downright simple and delicious! The recipe is so easy to remember; you merely need one can or cup of everything, five ingredients, and about 15 minutes to bake.

I make it often and made it for a recent football party, because bacon and football go together! You know, kind of like football and bourbon go together! We won the game we were expected to lose, so now they’re Good Luck No Fuss Tomato and Cheese Cups๐Ÿ˜‰

What is Rotel?

This classic Texas family recipe features a bold mix of sun-ripened tomatoes, spicy green chilies, and a flavorful blend of secret spices.

Rotel, or tomatoes with green chilies, is a great ingredient that adds a lot of flavor to recipes. I actually have a lot of recipes that use Rotel: Hamburger Rotel Cheese Dip, Chicken Rotel Quiche, Crock Pot Rotel Crack Chicken, White Queso Dip, Rotel Cheese Grits, and Sausage Rotel Dip Quiche.

These tomatoes come in different levels of heat and flavors. I use original mild, but you can change it up if you prefer.

I used phyllo sheets and molded them in mini muffin tins in the picture above because I had phyllo that needed to be used. Fill free to use the sheets, or the pre-formed phyllo cups which are easier and faster to work with.

Instructions

  • Place the phyllo cups on a cookie sheet or baking pan. 
  • Preheat oven to 375 degrees. 
  • In a large bowl, mix tomatoes (that have been drained), mayonnaise, bacon and cheese until well combined. Spoon 1 tablespoon mixture into each phyllo cup. Bake 15 to 18 minutes or until bubbly and cheese is melted. Serve hot or room temperature.
