Ingredients
- 2 to 3 medium green tomatoes cut into thin slices
- 1 cup panko bread crumbs
- ยผ teaspoon salt
- ยผ teaspoon black pepper
- 2 large eggs beaten
Instructions
- Preheat oven to 400 degrees F.
- Line a sheet tray with parchment paper or aluminum foil.
- Place panko in a shallow bowl.
- Add eggs to another bowl.
- Slice tomatoes and pat dry.
- Sprinkle tomato slices evenly with salt and pepper.
- Dredge tomato slices in egg then in panko to coat evenly.
- Place on sheet tray.
- Bake 30 minutes at 400 degrees F.
- Remove and cool on a wire rack.

Hi Elaine, all comments are held in pending until I can get to them. You responded 3 times within 15 minutes of each other. I work 10 to 12 hours a day and typically that is around 5 to 6 am until 4, 5 or 6 pm. For comments left after that time I get to them the next day. I do publish comments even if the rating is low unless the reader is extremely rude. Did you make the Wow Sauce for these tomatoes? I didn’t season them a whole lot because the Wow Sauce is very flavorful. Mine did get brown and crispy and you can always leave them in longer if needed to reach the about of crunch you desire. Maybe try them again with the Wow Sauce.
I liked the idea of not using oil to fry the green tomatoes and I do not eat wheat so gf panko sounded good. The slices did not brown up as I had expected and the texture of the panko was too granular in comparison to the tomatoes. It needed some subtle seasoning and since they were ready to come out of the oven I sprinkled some random giant pickled capers on top of the platter of tomatoes slices. Maybe I should have crushed the panko?
