Ok, I know, I had a month of bacon recipes on here and fall desserts recipes. My food philosophy is everything in moderation. While I did eat and love all those bacon recipes, I also was very careful when making this, this and this to balance it with this, this and this.
I try to eat healthy 80% of the time so I can enjoy cocktails and munchies with friends on the weekend or burgers with my boys for dinner. Or, I run an extra mile and have a smoothie for lunch so I can enjoy that huge piece of cake!

I usually add 2 cups of spinach then a cup of fruit. I use whatever I have. For this smoothie, I used apricot and since it was so big I didn’t use another fruit. Add coconut oil, a few nuts, and water or another liquid and blend until smooth. It’s tasty and has just the right ratio of fruits, vegetables, fiber, and fat.
- 2 cups spinach
- 1 apricot
- 1 cup coconut water
- 1/2 tablespoon coconut oil
- Place all ingredients in a blender or juicer. Pulse until smoothie is the consistency you like.
