Ok, I know, I had a month of bacon recipes on here and fall desserts recipes. My food philosophy is everything in moderation. While I did eat and love all those bacon recipes, I also was very careful to balance it with this, this and this.

I try to eat healthy 80% of the time so I can enjoy cocktails and munchies with friends on the weekend or burgers with my boys for dinner. Or, I run an extra mile and have a smoothie for lunch so I can enjoy that huge piece of cake!

I used to think juicing was for those super-health-conscious-fitness-instructor-type people. Then, I wanted to drop a few pounds for the swimsuit season and tried it. Plus, I wanted to consume more fruits and vegetables which I struggle getting enough of. Seriously, six months ago if you’d told me I’d be drinking spinach I would have laughed at you! Or that’s I’d intentionally be putting oil in my smoothies, I would have called you crazy.

I follow a lot of fitness instagramers to stay motivated to workout. I became intrigued with their diets and started incorporating their tips into my diet. I started Healthy Foods Pinterest boards; are you following me on Pinterest? (You should.)

I am only just beginning to know how healthy coconut oil is for us that’s why I’ve teamed up with Skinny Coconut Oil. So here’s the deal, you cannot taste spinach when it’s juiced with other fruits. Promise. Yeah, I was skeptical too, so I totally get your hesitation. I usually add 2 cups of spinach then a cup of fruit. I use whatever I have. For this smoothie, I used apricot and since it was so big I didn’t use another fruit. Add coconut oil, a few nuts, and water or another liquid and blend until smooth. It’s tasty and has just the right ratio of fruits, vegetables, fiber, and fat.

Ingredients

  • 2 cups spinach
  • 1 medium apricot
  • 1 cup coconut water
  • 1/2 tablespoon coconut oil

Instructions

  • Place all ingredients in a blender or juicer.
  • Pulse until the smoothie is the consistency you like.
  • Pour into a glass and serve immediately.

    Paula, I want you to know how much I appreciate you trying to invite me to your group board. Pinterest does goofy things sometimes. The invite did not come up at all in my regular Pinterest account. It did come up in my iPhone but anytime I try to access it, the program takes me to another page and will not take to me to the page where I can “accept” the invite. Thanks for trying anyway. I’m grateful for the effort and will not annoy you about this matter again. I love your blog and enjoy following you on bloglovin’.
