Ok, I know, I had a month of bacon recipes on here and fall desserts recipes. My food philosophy is everything in moderation. While I did eat and love all those bacon recipes, I also was very careful when making this, this and this to balance it with this, this and this.

So here’s the deal, you cannot taste spinach when it’s juiced with other fruits. Promise. Yeah, I was skeptical too, so I totally get your hesitation. I usually add 2 cups of spinach then a cup of fruit. I use whatever I have. For this smoothie I used an apricot and since it was so big I didn’t use another fruit. Add coconut oil, a few nuts and water or another liquid and blend until smooth. It’s tasty and has just the right ratio of fruits, vegetables, fiber and fat.
- 2 cups spinach
- 1 apricot
- 1 cup coconut water
- 1/2 tablespoon coconut oil
Place all ingredients in a blender or juicer. Pulse until smoothie is the consistency you like.
