  4. Heat a large non-stick skillet on medium-high heat with oil. Cook chicken for 2 minutes until a little bit crispy. It does not have to be cooked thoroughly. Transfer to a 9×13 inch baking dish with the grease and bake for 15-20 minutes.
  5. While the chicken is baking, make the sweet and sour sauce. Whisk the white vinegar and cornstarch together. Next, add the sugar and whisk until it dissolves. Add the rest of the ingredients and whisk. Heat the sauce in the same skillet until thick.
  6. Remove the chicken from the oven, pour the sauce, and toss gently.
