Now, you may be saying to yourself, ‘Self, nothing’s better than Cracker Barrel’s Hashbrowns’. Yeah, I thought that too. Until, I got to playing and tweaking my hashbrown recipe.

Better Than Cracker Barrel Hashbrown Casserole

My recipe is tastier and creamier. Honestly, the secret is using good quality ingredients. I use real butter, full fat sour cream, and cheddar cheese. What are Simple Potato hash browns?

They are a brand of hashbrowns (and other potato products) that are ‘fresh, never frozen’. I learned about Simple Potatoes when I did this sponsored recipe post Hash Brown Slow Cooker Potato Soup for Simple Potatoes. They are so much better than any other hashbrowns. (Of course, you can use any frozen hashbrown potatoes for this recipe.)

Both. It can be served any time of day for any meal. It’s just cheesy potatoes and they’re good any time.

 This potato casserole is good with breakfast or dinner. For dinner we like it with Juicy Marinated Grilled Pork Chops, Pork Belly Burnt Ends, and Philly Cheese Sausage Dog.

For dessert, serve a big slice of the best pecan pie.

Yes. You can freeze either before or after baking it. Keep it in an airtight container in the freezer for 3 months. (Be sure to label it with the name and date you put it in the freezer.)

Ingredients

  • 30 ounces hash browns I prefer Simply Potatoes, (thawed if frozen)
  • 1 can (10 ¾ ounce) condensed cream of chicken soup
  • ½ cup butter melted
  • ½ cup sour cream
  • 1 large shallot minced, about 2 tablespoons
  • 2 and ½ cups cheddar cheese shredded, divided
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  • Preheat oven to 350°F. Grease 9×11 inch baking pan with non-stick cooking spray.
  • Mix butter, cream of chicken soup, sour cream, shallot, 2 cups cheddar cheese, salt, and pepper in a large bowl. Stir to combine.
  • Add hash browns and mix. Spoon the hash brown mixture to the prepared pan and spread evenly. Sprinkle with remaining ½ cup shredded cheddar cheese over the top.
  • Bake in the preheated oven for 45-60 mins until ready.
  • Serve hot. Refrigerate leftovers in an airtight container and store in the fridge for up to 5 days.

  1. Hi, I have been making “Nancy Potatoes” for many years. Same recipe except we use Cream of Celery soup. I got the recipe before I got married (37 yrs ago) from my husbands cousin. It goes with every holiday and birthday. brunch, picnic or get together. It is a must have.
