Grilled Mexican Street Corn or Elotes (Elote in English translates to “corn”) is grilled corn on the cobb that’s smothered with spices and cheese. It originated in Mexico City where street vendors sold this plentiful produce. 

Of course, once in the U.S., we Americanized it with mayo, cream cheese, sour cream, and probably more ingredients that aren’t traditional. However, that’s the beauty of cooking you can cater any recipe to your tastes and liking.

Ingredients

  • 6 medium ears of corn
  • 2 medium limes zested and juiced
  • ½ cup mayonnaise or cream cheese or sour cream
  • 1 teaspoon salt more or less to your taste
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • 3 tablespoons butter
  • ½ teaspoon Tajin seasoning
  • 1 cup Queso Cotija grated
  • ¼ cup Cilantro chopped, loosely packed

Instructions

  • Start by covering the top half of your corn in lime juice, lime zest, and mayo.
  • Combine the salt, paprika, chili powder, and cumin.
  • Sprinkle seasoning mixture evenly over corn.
  • Wrap each ear of corn up in foil. Grill at 350 to 400 degrees for 10 minutes.
  • Remove from the grill and allow to cool slightly. Drizzle melted butter, Tajin seasoning, Queso Cotija, and cilantro over corn.
  • Serve immediately

    This turned out absolutely wonderful! I put some diced jalapeños in it before I wrapped it in foil to heat it up. We will definitely make this again!
