This is a pasta dish the whole family will love! I made this soup recipe with Italian sausage, spinach, onions, garlic, pasta, and heavy cream. It is perfectly creamy, hearty, easy, and delicious.
Creamy Italian Sausage Soup Recipe is one of my favorite soup recipes. It has incredible flavors. Plus, there’s nothing better on a cold night than a bowl of steaming hot soup. Comfort food multiplied.
Creamy Italian Sausage Soup Recipe
- I used Italian sausage. It’s my favorite and gives this soup a great taste. However, you can substitute lower-fat ground turkey or chicken for the sausage. As well, I recommend adding another teaspoon of Italian seasoning and 1/4 teaspoon of ground cayenne pepper to accommodate for the flavors omitted from the sausage.
- Additionally, you can use any shape of pasta in this soup or you can use tortellini.

- 1 pound Italian sausage
- ½ cup onion diced
- 1 cup carrots peeled and diced
- 4 cloves garlic minced
- 2 tablespoons all-purpose flour
- 5 cups chicken broth
- 14 ounces pasta cooked to al dente
- ½ teaspoon salt or to taste
- ½ teaspoon ground black pepper or to taste
- 1 teaspoon Italian seasoning
- 6 ounces spinach fresh, chopped
- 2 cups heavy cream or half & half, or low-fat mixture listed above
- ½ cup Parmesan grated, optional
Instructions
- In a large Dutch oven, cook the sausage on medium heat until browned. Transfer to a paper towel-lined plate.
- Add the onion and carrots to the Dutch oven and cook for 5 minutes or until they're soft. Add the garlic and cook 1 to 2 minutes or until its fragrant. Stir occasionally to keep it from burning.
- Whisk in the flour and cook it for one minute, stirring continuously.
- Gradually add the chicken broth. Whisk to combine. Cook until the mixture almost comes to a boil. Reduce the heat to simmer and allow it to cook for 5 to 6 minutes.
- Add the sausage, pasta, salt, pepper, Italian seasoning, spinach, and heavy cream. Stir. Simmer 5 to 6 minutes.
- Serve hot with grated Parmesan if desired.

This sounds most delicious! Would I be able to substitute for the heavy cream or half and half? Maybe milk with added cornstarch in place of heavy cream or half and half?

Whole milk and butter or just whole milk. You’ll lose some of the creaminess and flavor.

Quick question…is it 14 oz cooked pasta or 14 oz uncooked pasta?

It’s 14 ounces before you cook it. — But, you cook it before adding it to the soup.

You could add them uncooked when you add the carrots and cook them then. Or you could parboil them and add them at the end.

How much flour should you use. I don’t see flour listed as an ingredient, but #3 says to add it. I’m guessing maybe a tablespoon or 2?
