Crock Pot Mississippi Chicken Recipe. This is the chicken version of the popular, crowd-pleasing Mississippi Pot Roast recipe.

This is one of those recipes that you’ll make again and again. It’s easy. Everyone likes it. It’s very versatile. And, it uses pantry staples. You can double the batch or half the batch. But, never half it, trust me, you’ll eat the leftovers.

 

HOW DO YOU MAKE MISSISSIPPI CHICKEN IN A SLOW COOKER?

Quite literally, you put chicken, ranch, French onion soup, and pepperoncini peppers in a slow cooker and turn it on. Wait a few hours and you’ve got a delicious, low-carb meal.

  • Chicken breasts. Skinless, boneless chicken breasts, you can also use thighs
  • Pepperoncini peppers. Sliced or whole. I prefer sliced, they’re easier to eat. I also add 1/3 cup of pepperoncini brine.
  • French onion soup. This is where some of the recipes differ. I like to use 10-ounces of French Onion Soup. You can also use an Au Jus seasoning pack or Au Jus gravy (in a can). Furthermore, you can use Chicken Gravy Mix but I recommend the low sodium. There’s enough liquid for the gravy without having to make it, just add the seasoning.
  • Ranch seasoning. Store-bought or homemade ranch if you’re watching salt consumption.

SLOW COOKER MISSISSIPPI CHICKEN RECIPE METHOD

  1. Add the chicken to the slow cooker. You can actually cook 2 to 3 pounds of chicken.
  2. Sprinkle the Ranch seasoning over the chicken.
  3. Pour the French onion soup over the chicken.
  4. Drain the pepperoncini peppers and reserve 1/3 cup. Pour peppers over the chicken and 1/3 of the brine.
  5. Cover and cook for 4 hours on high or 6 hours on low.

What are pepperoncini peppers?

Pepperoncini peppers are mild, sweet Italian chili peppers. They are also known as the Golden Greek pepper, Sweet Italian pepper, or Tuscan pepper. Pepperoncinis are thin-skinned, light yellow-green peppers, typically 2 to 3 inches in length, have wrinkled skin. They’re usually sold pickled.

Can I use chicken thighs?

Yes. In fact, some people prefer thighs. You can almost always substitute chicken thighs for chicken breasts in recipes. 

Can I use frozen chicken?

The FDA does not recommend adding frozen chicken to a slow cooker. This is because it doesn’t heat fast enough.

What can I do to make it less salty?

Once I started cutting back on salt, I realize store-bought Ranch seasoning is pretty salty. That’s when I made this recipe for Homemade Ranch Seasoning. For this Mississippi chicken recipe, I don’t add any salt to the Ranch seasoning. I find the brine of pepperoncini peppers adds enough salt.

Once cooked if you find it not salty enough, it’s easy to add a little salt.

What can I use instead of au jus?

You can omit it. As well, you can use French onion soup or chicken gravy.

What do you serve MS Chicken with?

  • It’s great with rice, quinoa, and mashed potatoes.
  • As well, I like it with broccoli, Brussels Sprouts, or green beans.
  • It’s good plain or served in tacos or buns.

How do I store leftovers?

Store leftovers in an airtight container in the refrigerator for up to 5 days.

You can also freeze cooked MS chicken. Store in a zip-top freezer bag and squeeze out as much air as you can. Then put it in another zip-top freezer bag. It’s best used within two months of freezing. Thaw it in the refrigerator and heat it in the microwave or stovetop.
