EASY BALSAMIC CHICKEN CAPRESE SALAD RECIPE

EASY BALSAMIC CHICKEN CAPRESE SALAD RECIPE
Caprese Salad is a traditional Italian salad of fresh mozzarella, tomatoes, basil leaves, salt, and olive oil.
I made that simple salad heartier for an entree salad by adding chicken. As well, I added balsamic vinaigrette, because I love it so much I could probably drink it. It complements the flavors of the chicken and green salad beautifully.
These is the specs on my air fryer. Adjust your cook time accordingly.
- My air fryer is 1500W and has a round basket.
- It’s 4 Quarts which is medium size and I cooked it in 2 batches.
- The heat ranges from 105°Fahrenheit to 400°F
CHICKEN CAPRESE SALAD INGREDIENTS
- Chicken. Boneless chicken breast or thighs.
- Olive Oil.
- Spices. Garlic powder, salt, pepper, basil (dried), and oregano.
- Balsamic vinegar.
- Brown sugar. You can sub coconut sugar, agave, or honey.
- Lettuce. I used Romaine.
- Tomatoes. Grape, cherry, or heirloom tomatoes cut into chunks.
- Mozzarella. Fresh mozzarella balls or slices cubed.
- Fresh Basil. Sliced thinly.
When do I know that the chicken is cooked?
Chicken must reach an internal temperature of 165° F. It’s best to rely on an instant-read thermometer for accuracy.
How to store leftovers
Allow to cool down completely and store in an airtight container for up to 3 days.
How to freeze
Allow it to cool completely then freeze in a ziplock bag or wrap in aluminum foil.
How to reheat
Reheat in the air fryer at 320°F | 160°C until warmed through.

For the Chicken in the air fryer
- 4 medium chicken breasts boneless skinless
- 1 teaspoon extra virgin olive oil
- ½ teaspoon garlic powder
- Sea salt to taste
- Ground black pepper to taste
- 1 teaspoon dried basil
- ½ teaspoon oregano
- 1 tablespoon balsamic vinegar
For the Balsamic Glaze
- ¼ cup (2.02 fl.oz | 60 ml) balsamic vinegar
- 2 teaspoons brown sugar
For the Caprese Salad
- 4 cups (10.58 oz | 300 g) Romaine lettuce
- 1 cup (5.29 oz | 150 g) cherry tomatoes or heirloom
- ½ cup (3.24 oz | 92g) fresh mozzarella balls
- ¼ cup or 10-12 basil leaves thinly sliced
Instructions
- Preheat your air fryer to 374 F | 190 C. Grease the basket with cooking spray.
Marinate the chicken
- In a large bowl, add chicken, oil, garlic, salt, pepper, dried basil, oregano, and balsamic vinegar. Toss to cover the chicken and set aside while the air fryer is heating. When ready, place chicken breast in the air fryer basket and air fry for about 5 minutes then flip chicken and cook the other side for another 5 minutes. Remove and slice the chicken.
Balsamic Glaze
- Add balsamic vinegar and sugar to a saucepan. Cook on medium heat by whisking frequently until the sauce thickens.
Caprese Salad
- In a large salad bowl, add lettuce, tomato, avocado, mozzarella balls, and chicken. Garnish with basil leaves and drizzle with the balsamic glaze.
