Feta Almond Watermelon Salad
I made a Watermelon Salad last year that I’m absolutely still in love with. But, being the foodie that I am, I like to tweak a recipe. Even if it’s a great recipe, something inside me wants it to be better!
Feta Almond Watermelon Salad is cool and refreshing. Spring salad greens sit on a thick watermelon steak. Feta adds a tang, and almonds add a nice crunch.
The one ingredient that makes this recipe really sing is Balsamic Reduction. Seriously, I could drink this stuff! Just don’t lean over the pan while it’s reducing and take a big sniff! It’ll totally clear your sinuses and, yes, I learned the hard way on that one!

How to Make Feta Almond Watermelon Salad
Time needed: 10 minutes
Simple ingredients make a beautiful presentation. A seedless watermelon is ideal for this recipe. As you can see in the Instagram picture, my watermelon turned out to have seeds. If this happens, remove as many as you can. You may even want to slice the watermelon thinner or in chunks in order to remove the seeds.
- Slice chilled seedless watermelon into thick rounds and remove the rind.
- Place one watermelon slice on each serving plate.
- Top each slice with baby greens.
- Scatter blackberries over the greens.
- Sprinkle with feta cheese and toasted almonds.
- Finish with a generous drizzle of balsamic reduction.
- Serve immediately or refrigerate until ready to enjoy.

Tips for the Best Watermelon Salad
Choose a ripe watermelon that’s heavy for its size and has a creamy yellow field spot.
Toast the almonds before adding them to the salad. Toasting brings out more flavor and adds extra crunch.
Keep the watermelon cold until serving. Chilled watermelon makes this salad especially refreshing on hot days.
Use high-quality feta packed in brine if possible. It has a creamier texture and richer flavor than pre-crumbled feta.
Add the balsamic reduction just before serving so the greens stay crisp.
Variations
- Add fresh basil or mint.
- Substitute blueberries or raspberries for the blackberries.
- Use candied pecans instead of almonds.
- Add grilled chicken for a complete meal.
- Finish with freshly cracked black pepper.

Storage
This salad is best served fresh.
If preparing ahead, assemble everything except the balsamic reduction. Cover and refrigerate for up to 6 hours. Add the glaze immediately before serving.
Leftovers will keep in the refrigerator for about one day, although the greens will soften.

Recipe Tips
For the prettiest presentation, serve each watermelon slice as an individual salad. It creates a restaurant-style look that’s surprisingly easy to make.
If serving buffet-style, cube the watermelon instead of slicing it into steaks and toss everything together in a large serving bowl.

This salad was almost too beautiful to let anyone eat! lol But I relented and we loved it so much! The sweet of the watermelon combined with just a slight tartness from the berries and balsamic and a little richness and fattiness from the feta and almonds to make a perfect bite! Oh my goodness! It was scrumptious! I seriously can’t wait to make it again.
This is a perfect summer recipe. I love the watermelon with saltiness of the feta.
A delicious salad and a beautiful presentation!
