I love the ease of a slow cooker for busy weeknight meals. What’s even better than the help of a slow cooker is products that are healthy, but already prepped for you. This makes getting your recipe ready even quicker.

Hash Brown Slow Cooker Potato Soup Tips

  1. First, if you don’t have a slow cooker, you can make this stovetop in a large pot. Add your ingredients to a large pot. Then, cook the potatoes on simmer for 2 hours.
  2. As well, change up your soup by adding one cup each of corn and/or ham and 1/2 cup of celery.
  3. Finally, Simply Potatoes in the refrigerated dairy section of your grocery store. They’re in the cooler next to the eggs at my store. (Simply Potatoes are really better than frozen hash brown potatoes. Therefore, I highly recommend them. However, you can use frozen.)

Hash Brown Slow Cooker Potato Soup is hearty and satisfying. This soup recipe is a family favorite. It's easy to make and taste amazing. The soup is thick, rich and cheesy making it a stand-alone meal.

Ingredients

  • 20 -ounce bag Simply Potato Shredded Hash Brown Potatoes
  • 32- ounce chicken broth
  • 1 cup water
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup onion diced
  • 3 tablespoon flour
  • 1 cup heavy cream
  • 2 cups cheddar cheese shredded

Instructions

  • Add broth, water, onion, salt, pepper and potatoes to slow cooker.
  • Cook on high 3 hours.
  • Whisk flour and cream together until smooth. Add to slow cooker.
  • Cook 30 minutes on medium.
  • Add cheese and stir until cheese is melted.
  • Serve hot with cheese, sour cream, bacon and green onions.

    Great recipe! I didn’t have heavy cream so I subbed a block of cream cheese and a 1/2 c of milk. It was delicious… I added real bacon bits and it seriously tasted just like outback’s loaded potato soup.

    My schedule these days is so busy, I have to do crock pot recipe pretty often. This was so creamy and good that my picky husband was impressed. I made on change but my husband hates onion, I precooked then so they would pretty much disintegrate and he wouldn’t find one.

    They didn’t have the hashbrowns so used the diced potato version. Blended before I added the cream mixture. Added garlic powder and a bit of paprika. Turned out thick and delicious. Topped with cheese, bacon and a little sour cream. Awesome on this snowy day

    Do I need to change anything if I use frozen hash browns? My store was out of the simply potato kind.

      My store was also out of simply potatoes, so I tried the frozen ones. When I made this with simply potatoes it was fabulous. Seriously not as good with frozen. Glad I made it the correct was first!

    Dynamite! Added a touch of nutmeg but otherwise played by the rules. Doubled the recipe and it was SOOOO Good! My soup-hating son even loved it. (Adding bacon helped!). I will for sure make this again.

    I’m in the process of grating a 50lb box of potatoes into hash browns…This soup recipe looks fantastic and will definitely use up some of these hash browns. I’m going to use your suggestions of adding ham and celery…YUM!
