Are you familiar with chess pies? Chess pie’s texture is similar to the goo found in pecan pies or like underbaked brownies. It’s thick, sweet, and smooth with a slightly crisp top. I like to use a store-bought pie crust to save time, but a homemade crust works too. Unlike many pies, you don’t need to blind bake this pie. In fact, I pour the filling in when the crust is still frozen. Because it bakes for so long, this works well, and the edges don’t overcook. However, if you see the crust is browning too fast, you can cover it with foil.

Note: *Most pie crust recipes make two pie crusts. This pie recipe makes one pie so freeze the remaining dough for future use.

Let the your Nutella chess pie cool completely before cutting so the filling sets well. Otherwise, it run. I actually refrigerate mine. Serving it chilled makes it easier to slice cleanly and gives the filling a fudge-like texture.

Ingredients

  • 1 9-inch deep dish Homemade pie crust or store-bought *
  • 1 and ยพ cups sugar 362g
  • ยผ cup all-purpose flour 24g
  • 6 tablespoons unsalted butter melted, 84g
  • 1 teaspoon vanilla extract
  • 2 large eggs beaten, room temperature
  • ยพ cup buttermilk room temperature, 120ml
  • 7 tablespoons Nutella spread

Instructions

  • If you're making a homemade crust, make the pie crust according to the instructions. Once you have your pie crust made and rolled out, press it into a sprayed 9-inch deep-dish pie pan. โ€œDockโ€ the crust by pricking it with a fork so that it doesn't bubble up.

  • Next, refrigerate the crust for 2-3 hours or freeze for about an hour. You want to be sure the crust is very cold. When the crust is cold proceed with the pie.
  • Preheat oven temperature to 425ยฐF.
  • To make the filling, combine the sugar and flour in a large mixing bowl. Add the melted butter, vanilla extract, eggs, and buttermilk. Use a silicon spatula to gently combine the ingredients. Donโ€™t over mix and add too much air.

  • Gently stir in the chocolate hazelnut spread until combined.

  • Pour the pie filling into the cold crust. Bake for 10 minutes at 425โ„‰. Reduce the oven temperature to 325ยฐF and bake for another 35-45 minutes. Add a pie crust shield or foil about half way through, if needed.
  • Remove the pie from the oven and set on a wire rack to cool for 1-2 hours, until room temperature. Don't cover until completely cool.
  • Cover the pie and place in the fridge to cool completely about 4 hours. This pie can be made 1-2 days ahead and refrigerated until ready to serve. It's best eaten in 4 to 5 days of making.
