Pecan Pie Magic Cookie Bars with Chocolate Shortbread Crust

These will not last long at a party! Pecan Pie Magic Cookie Bars with Chocolate Shortbread Crust have a buttery shortbread crust with layers of pecan pie flavors.

Magic Cookie Bars are also known as Seven Layer Bars and Hello Dolly Bars.

Traditional Magic Cookie Bars are layers of ingredients, beginning with a graham cracker crust and ending with sweetened condensed milk. When baked, the sweetened condensed milk binds everything together, and they magically become one gooey, crunchy, amazing dessert bar.

For my Pecan Pie Magic Cookie Bars with Chocolate Shortbread Crust, I used the same concept but changed the ingredients to taste like Pecan Pie. They are wonderful!

Ingredients

  • Butter room temperature
  • Granulated sugar
  • Vanilla extract
  • All-purpose flour sifted
  • Cocoa sifted
  • Pecans chopped fine
  • Kraft Caramel Bits
  • Shredded coconut
  • Sweetened condensed milk

My layers start with a chocolate shortbread crust. Next, I layered pecans, caramel, coconut, and the magical sweetened condensed milk. After 30 minutes in the oven, the sweetened condensed milk sticks all the layers together. And, it was a wonderful thing!

The great thing about this recipe is that it’s customizable. If you don’t like coconut, use less, leave it out, and layer on more pecans or caramel. Broken pretzels would also be amazing on this version of Magic Bars. You can also use chocolate chips, butterscotch chips, or M&Ms would be good.

Once your pecan pie bars are baked, let them cool before cutting them. The sweetened condensed milk needs to cool and set. Otherwise, they’ll be a gooey mess.

You get multiple flavors and textures when you bite into these. They are creamy, crunchy, sweet, and salty. It’s hard to have just one!

Ingredients

For the crust

  • 1 cup butter room temperature
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 and 2/3 cups all-purpose flour sifted
  • 1/4 cup cocoa sifted
  • 1 cup pecans chopped fine

For the bars

  • 1 cup pecans whole or chopped
  • 1 cup Kraft Caramel Bits
  • 1 cup shredded coconut
  • 1 14-ounce can sweetened condensed milk

Instructions

  • Preheat oven to 350 degrees F. Line a 9×9 inch baking pan with parchment paper or aluminum foil and spray with non-stick cooking spray.
  • Cream butter and sugar until smooth. Add vanilla, flour, cocoa, and pecans and stir until blended. Press dough into prepared pan as evenly as you can. The dough will be thin.  Bake 20 minutes until lightly brown around edges.
  • Layer on Kraft Caramel Bits, coconut, pecans, and sweetened condensed milk.
  • Bake 27 to 30 minutes or until center of bars is set. Cool completely before cutting.
