Ingredients

  • ¾ cup pineapple juice
  • cup coconut rum
  • cup lime juice
  • cup simple syrup
  • maraschino cherry, pineapple chunks, lime wheel, mint for garnish, if desired

Instructions

  • Fill a 12-ounce glass with ice.
  • Add all the ingredients to the glass and stir.
  • Top with a garnish, if desired and serve immediately.

Notes

For a pitcher, or about 10 servings, use these amounts:
  •  8 cups (64 ounces) pineapple juice
  •  3 cups coconut rum
  • 1 cup (8 ounces) freshly squeezed lime juice
  • 1 cup (8 ounces) simple syrup (recipe in post)
Combine all ingredients in a large pitcher and stir. 
If you make it ahead of time, be sure to stir it before serving.
Add ice to your glasses when ready to serve, not to the pitcher, or it’ll water down your punch.
