The deep waffle pockets are perfect for holding chocolate sauce, whipped topping, sprinkles, ice cream, or fresh berries. Best of all, you only need a handful of pantry ingredients and one small trick that keeps the waffles from sticking.

This recipe couldn’t be easier and is ready, from start to finish, in 10 minutes.

Ingredients

  • brownie mix*
  • Ingredients listed on the brownie mix box: egg, water, oil
  • additional large egg
  • additional tablespoon oil
  • Whipped topping
  • Chocolate sauce
  • Sprinkles
  • For an extra chocolate punch, add 1/2 cup of chocolate chips to the batter.  For a fun color contrast, use white chocolate chips.

*I used a Duncan Hines brownie mix for this shoot.  However, during testing, I also used Betty Crocker, Ghirardelli, and Best Value (Walmart brand).  All of the mixes were slightly different quantities. All of the box mixes worked for this recipe.  No matter which mix you choose to use, an egg and a tablespoon of neutral oil must be added to the batter in addition to the ingredients listed on the box.

If your boxed brownie mix calls for either milk or water, I would recommend the water for two reasons.  For one, it is a lot cheaper.  The second reason is that milk can cause the waffles to rise a little too much.  You will end up with a more cake-y waffle that is soft and not quite as crisp.  Don’t get me wrong, milk will still work and will still taste amazing, but water will give you a more waffle-like consistency. 

How to Make Brownie Waffles

Time needed: 10 minutes

  1. Preheat your waffle maker. (Make sure your waffle maker is preheated before pouring the batter into it.  Even between batches… always make sure the ready light is on before pouring it in.)

    Using a pastry brush, coat both cooking plates with a light layer of canola or vegetable oil.
    Don’t skip this step. Even nonstick waffle makers need to be greased because brownie batter is much stickier than regular waffle batter.

  2. In a large bowl, combine the brownie mix with the ingredients listed on the package.
    Then stir in one additional egg and one additional tablespoon of oil.
    Mix until smooth and thick.

  3. Pour enough batter into the center of your hot waffle maker to cover most of the surface. The exact amount depends on the size of your waffle maker.
    Cook for 2 to 3 minutes before checking.
    Avoid opening the waffle maker too early. The waffle is ready when the surface looks dry and releases easily.

  4. Carefully remove the brownie waffle and serve warm with whipped topping, chocolate sauce, and colorful sprinkles.

  • Grease the waffle maker before every batch.
  • Let the waffle cook completely before opening the lid.
  • Use a silicone spatula if needed to gently lift the waffle.

Storage

Store leftover brownie waffles in an airtight container in the refrigerator for up to 4 days.

You can freeze these waffles in an airtight container for up to 2 months. Be sure the waffles have cooled to room temperature before boxing them up. When you are ready to enjoy, remove only the waffles you need and place them, frozen, in the toaster on low heat for a few minutes. No need to thaw them, but it may take a minute or two longer in the toaster if you are warming from frozen. I love making waffles on Sunday morning and then freezing them for busy weekday mornings.

For crispy edges, reheat in:

  • Air fryer: 2–3 minutes
  • Toaster oven: 3–4 minutes
  • Oven: 350°F for about 5 minutes

Avoid microwaving if possible because it softens the outside.

Common questions I get regarding chocolate waffles.

Can I use any brownie mix?

Yes. Most 16 to 18-ounce boxed brownie mixes work well. Simply prepare according to the package directions, then add one extra egg and one extra tablespoon of oil.

Why do brownie waffles stick?

Brownie batter contains more sugar than regular waffle batter, making it much stickier. Thoroughly grease your waffle maker before each batch.

Can I make these ahead?

Yes. Store in the refrigerator or freezer and reheat in an air fryer or toaster oven.

Can I add chocolate chips?

Absolutely. Stir in about ½ cup mini chocolate chips before cooking.

Can I serve these for breakfast?

You certainly can, but they’re definitely more dessert than breakfast!

Expert Tips

The biggest mistake people make is treating brownie batter like waffle batter. Brownie batter needs a little more cooking time before you open the waffle maker. If you peek too soon, the waffle may split apart.

Another tip is to grease the waffle iron every single time, even if it’s nonstick. That one simple step makes cleanup much easier.

Instructions

  • You'll also need canola or vegetable oil for the waffle maker
  • Preheat your waffle maker. Use a pastry brush to brush a small amount of oil on the grill. This step is vital to this recipe. My waffle maker is a non-stick one and I still grease it. Brownie batter is incredible sticky and can make a huge mess if the pan is not greased properly.
  • In a large mixing bowl, place the brownie mix, the ingredients needed to make the brownies, an additional egg and an additional tablespoon of oil. My brownie mix called for an egg, a cup of water and a 1/3 cup of canola oil. Stir the ingredients until you get a thick batter.
    16.3 oz brownie mix, 1 large egg, 1 cup water, ⅓ cup oil, 1 extra large egg, 1 extra tablespoon oil
  • Pour the batter into your preheated waffle maker. The amount you pour in will be completely dependant on the size of your maker. Cook for 2-3 minutes before attempting to open the waffle maker. Opening the waffle maker too soon can cause the waffle to split. The waffle should appear “dry” when the waffle is ready.
  • Remove to a plate and serve warm with chocolate sauce, whipped cream and sprinkles.

‼️Most Important

I cannot stress enough how important it is to grease the pan with oil. I understand that this isn’t always done, in fact this is the only waffle recipe that I have that requires this step.  I cleaned out the waffle maker so may times in testing this recipe and trust me, it is the worst cleaning job around.  Even if your pan is a non-stick one (and my pan is), you must grease the pan. 
Non-stick cooking spray doesn’t always work, it completely depends on the spray, so I always recommend oil.  A neutral oil like canola, vegetable or avocado is best but olive oil will work too.  You can also use melted butter or margarine if you prefer.  A pastry or bbq brush will get the grease into all of those waffle cavities.
