Keto Cheese Biscuits with Almond Flour are easy-to-make and flavorful. Using almond flour, cream cheese, and cheddar cheese they are a great alternative to traditional breakfast biscuits.

KETO CHEESE BISCUITS WITH ALMOND FLOUR

I don’t follow a low-carb diet and I’m not gluten intolerant. However, I was simply curious about how low-carb biscuits taste compared to traditional biscuits.

KETO CHEESE BISCUITS INGREDIENTS 

  • Cream cheese. It has to be room temperature and soft so that it will mix smoothly into the other ingredients.
  • Cheddar cheese. Grated.
  • Egg. Use a large egg at room temperature.
  • Almond flour.
  • Baking powder.
  • Salt.
  • Almond milk. You can also use heavy cream.
  • Butter. Use real butter, melted. You can use salted or unsalted. 

As well, I used Beyond Meat Breakfast Sausage because I’ve been wanting to try the Beyond Meat products.

KETO CHEESE BISCUITS WITH ALMOND FLOUR

The dough was wetter than my traditional biscuit dough. After refrigerating it for 15 minutes, it was a little dryer. Instead of rolling the dough and cutting it like I typically do, I used a spring-release to scoop out the dough onto a silicone-lined sheet pan. I pressed down to about 1-inch thickness. 

At 350°F, it took 17 minutes for them to cook. They did not brown and I was tempted to leave them in longer. Actually, I took one out and broke it open. It was perfectly cooked. However, had I not done that I could have overcooked them. 

TASTE AND TEXTURE

I’d give the taste an A, but I’d give the texture a C. They tasted really good. However, the texture wasn’t at all like a typical Southern biscuit. It was course and more like the texture of cornbread. Having not worked with almond flour very much, it could have been the flour I used. I intend to test with another brand and I’ll update this when I do.

BEYOND MEAT SAUSAGE

This isn’t a sponsored post, I have been wanting to try Beyond Meat for a while. Beyond Meat is a brand of plant-based products made to replicate ground meat, sausage, meatballs, chicken, and jerky. Because they’re vegan there are no antibiotics, cholesterol, or hormones. They are packed with protein with less total and saturated fat, less sodium, and fewer calories than pork sausage.

They cooked just like pork sausage and with much less fat. As well, they tasted good to me, however, I don’t think my boys would like them. The taste and texture are definitely not the same as pork sausage. I like turkey sausage and they do not like turkey sausage at all. (If I can get them to try Beyond Meat, I’ll report back.)

Ingredients

  • 1.5 ounces cream cheese at room temperature
  • ½ cup cheddar cheese shredded
  • 1 large egg at room temperature
  • 1 cup almond flour
  • ½ teaspoon baking powder
  • ⅛ teaspoon salt
  • 2 tablespoons almond milk
  • ½ tablespoon butter salted or unsalted, melted

Instructions

  • Preheat the oven to 350 degrees.
  • Combine the softened cream cheese, cheddar cheese, and egg in a mixing bowl. Stir until cream cheese is creamy and smooth.
  • Next, stir in the almond flour, baking powder, salt, almond milk, and melted butter. Be careful not to overmix or biscuits will be tough.
  • Place the dough in the refrigerator and chill it for 10-15 minutes.
  • Scoop biscuits out with a spring-release scoop and place them onto a greased or silicone-lined baking sheet.
  • Bake 15-18 minutes until golden.
  • While the biscuits bake, cook the sausage patties in a skillet over medium heat until cooked through. 
  • Serve warm assembled as sandwiches.
  • To store, assemble the sausage and biscuits into sandwiches and wrap individually with plastic wrap. Refrigerate for 5 days or freeze for 4 weeks. Reheat in the microwave.

    Thank you for stepping outside the box for those of us who follow a keto diet. I can’t wait to try these.

    As far as trying the Beyond Meat, my concern is just how healthy can this be with all the chemicals that have to be added to make something taste like something it is not? I have yet to find anyone who can explain why this is a healthier way to go. I’ve tried it and it is good but not sure it is healthier.

      I tend to agree with Beyond Meat. I do love a veggie burger that I make from black beans, cauliflower etc but wasn’t a fan of Beyond Meat sausage. I haven’t tried the ‘burger’ yet.
