Quick and Creamy Broccoli Apple Salad Recipe (aka Broccoli Waldorf Salad) is a delicious mix of sweet, tangy, crunchy, and creamy. It is brimming with broccoli, apples, carrots, cranberries, walnuts, and a creamy yogurt mayo dressing.

This broccoli apple salad is one salad you will want to make time and time again. The combination of raw broccoli, crisp sweet apple, crisp carrots, crunchy walnuts, and tart cranberries is truly amazing.

Not only is this salad delicious, but it’s also incredibly easy to make. There is absolutely no cooking involved. Simply combine the ingredients and the salad is good to go. It’s also a great make-ahead recipe, it holds up well in the fridge for 2 to 3 days.

For this reason, it’s a summer staple at my house. It complements any main dish.

This salad is perfect served as a side with grilled meats. To turn the salad into a complete meal, try topping it with chunks of grilled chicken.

INGREDIENTS FOR YOUR BROCCOLI APPLE SALAD

  • Broccoli. You’ll need just broccoli florets. Learn how to cut florets here.
  • Apples. I enjoy Honey Crisp and Granny Smith apples for this salad. They’re tart and firm.
  • Carrots. You can use grated or julienned carrots. Here’s a great tutorial on How to Julienne Carrots.
  • Walnuts. Pecan, sunflower seeds, or almonds would make a good substitution. I typically use whatever nut I have on hand. You can omit nuts altogether if you like.
  • Cranberries. I prefer tart cranberries but you can use raisins as well.
  • *Optional – Red onion. Red onion is a nice addition if you like onion. I prefer to chop them finely. You could also use green onions or shallots.
  • *Optional – Bacon. Let’s be frank, when is bacon not good on something?
  • Greek yogurt. As well, you can sub sour cream.
  • Mayonnaise. If you’re not a fan of Greek yogurt, you can make the dressing with all mayonnaise.
  • Apple cider vinegar. Naturally, vinegar adds tang to the dressing. It also keeps the apples from turning brown. You can substitute fresh lemon juice.
  • Honey.
  • Salt and pepper. Add to your liking.

One of the things I like most about this salad is the ingredients are available all year.

As stated above, Broccoli Apple Salad is made using raw broccoli. If you prefer cooked broccoli, lightly steam the broccoli until tender-crisp. Allow the broccoli to cool completely before adding it to the salad with the other ingredients.

This salad dressing is made lighter by using Greek yogurt. If preferred, omit the yogurt and use 1 cup of mayonnaise in place of the 1/2 cup of yogurt.

Furthermore, you can use coconut milk and avocado oil to replace the yogurt and mayonnaise in the dressing.

Store the salad in the refrigerator in an airtight container. You can lengthen the time it stays fresh even longer by not adding the dressing to the salad. Instead, add dressing to each serving or assemble the ingredients the night before and add the dressing just before you serve it.

Ingredients

  • 4 cups broccoli florets chopped
  • 1 medium apple cored and diced
  • 1 medium carrot peeled and grated
  • ½ cup walnuts roughly chopped, or any nut
  • ¼ cup dried cranberries

Dressing

  • ½ cup Greek yogurt
  • ½ cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • salt and pepper to taste

Instructions

  • Add to a large bowl the broccoli, apple, carrot, walnuts, and cranberries.  Stir to combine.
  • To make the dressing, add to a small bowl the yogurt, mayonnaise, apple cider vinegar, and honey.  Stir until well combined.  Season to taste.
  • Pour the dressing over the salad and stir until the salad is coated well with the dressing.
  • Serve immediately, or store in the fridge until ready to serve
