Ritz Bits Churros Recipe
This easy recipe is great for an afternoon snack, game watching, tailgating, and family movie or game night.
These snack crackers also make a good gift if you need to bribe a gift for a neighbor, teacher, or friend.
Made with Ritz Bits sandwich crackers, these churro bites make the perfect salty and sweet snack!
RITZ BITS CHURROS RECIPE
You’ll want to line a baking sheet with foil sprayed with non-stick spray or parchment paper.
Spread your crackers out in a single layer over the foil.
Cook the sauce. This is the only difficult step of the recipe. Have your ingredients measured and ready. As well, you want a timer ready to start. In a medium saucepan combine butter and brown sugar. Stirring constantly bring the mixture to a boil and boil for 1 minute. Remove the mixture from the heat and stir in 1 teaspoon of cinnamon and 1 teaspoon vanilla.
Pour this immediately on top of the crackers as evenly as you can. As well, smooth out over any crackers that didn’t get covered, but you’ll need to be quick as the mixture will cool and harden fast.
Next, bake the crackers for 10 minutes until the caramel sauce is bubbly.
While the crackers are cooking combine the granulated sugar, cinnamon, and salt. When the crackers are done remove the pan from the oven and immediately sprinkle with the cinnamon mixture. Sprinkle as evenly as you can.

I live in dry Colorado and made these for a treat plate for friends and neighbors. They came out really sticky. Next time I would increase the cooking time for the butter and sugar to four or five minutes. Also, I would increase the cooking temperature to 400 degrees. Very disappointing!
Paula says
It’s not the recipe. Altitude affects making caramel/toffee which is essentially what’s being made with the coating.
Carol says
Nice reply. Directions to correct the issue would have been helpful. Everybody liked them anyway. I would love to make them again with corrections.
Paula says
Hi Carol, I live in Mississippi and don’t cook at high altitude. If I gave you a work-around it would be information from Google search and one I can’t test and confirm. I’m not comfortable doing that.
Lis says
Made these using plain mini ritz crackers, but put Cinnamon Toast Crunch Spread in the middle of 2 crackers. (it was on sale at Sam’s Club) and followed the remainder of the recipe. Was really good.
Paula says
oh goodness, that sounds wonderful!
Lorie Pyne says
These are awesome, and definitely addictive. A keeper recipe for sure.
Kim Inskeep says
I cannot find Ritz bits peanut butter anywhere!! Do you think these would work using peanut butter filled pretzels?
Paula says
Here’s a link if you’re interested in ordering https://amzn.to/3eHTZoI
I think pretzels would be good, different, but good.
Susan says
What are you supposed to do with the peanut butter?
Paula says
There’s no peanut butter other than what’s in the crackers – you use Ritz Bits peanut butter sandwich crackers like this> https://amzn.to/3aK9YB3
Kathie says
These are excellent! However, I think the caramel is too much for 1 box. It was a little too thick and even after I refrigerated them was soft and hard to break up. I will definitely make them again with some adjustments on the quantities and I will post again with updates. Very tasty though!!
Paula says
Thanks for your feedback, Kathie. I’m interested in your changes so please let me know.
Franny Hobbs says
I want to make these but I don’t understand why the instructions say to break into pieces after the crackers have cooled. Also how does the hot mixture get to the bottom of the cracker?
Paula says
It seeps under them. You can toss if you like, but my experience found that the caramel cools and hardens too quickly to stir them. If you’ve worked with caramel before you know how it spreads and hardens as it cools… some of the crackers will stick together.
Kim Adams says
Anxious to try these! Look amazing!! Do I need to “pack” the brown sugar?
Paula says
Yes
Natalie says
Hi! I just made these for the first time, and they are still really soft and gooey. Does it take awhile for them to harden to be broken up? The taste is good, just very spread out and lots of extra of the toffee stuff. I thought 2 sticks of butter was too much but if nobody else has had trouble with it maybe it’s me?! I boiled for 1 minute, and baked for 10.
Teresa Ray says
Sometimes when your cooking caramel or fudge, if the humidity is high it will not set up as well.
Marion says
Good Morning, I am so excited to try these, but i do have one question. When you take them out of oven and sprinkle with cinnamon and sugar do you flip them as well and do the bottoms?
Thank you!
Paula says
I found that the cinnamon sugar mixture oozes under the crackers as you’re smoothing them out. The first time I made them I tried to flip and stir and the caramel mixture cooled and began to harden too quickly to toss them.
Vidal says
Silly question but does anyhow know if these age/travel well? I’m hoping to make them and ship to a deployed soldier but I’m worried they’ll not last the journey.
Paula says
I’m not sure about shipping but another reader made either this recipe or this one (https://www.callmepmc.com/baked-seasoned-ritz-bits/) for a road trip last year and was happy with how they ‘aged’. Her comments are on one of these two posts.
Susie says
Ok, I didn’t read the recipe all the way through before starting. SO EVERYONE READ THE RECIPE ALL THE WAY THROUGH!!! I also forgot the vanilla even though it was sitting on the stove ready to pour. They are baking right now and I can’t wait for them to be done. I tasted the sugar/butter after I poured over the crackers and it was wonderful. Now, just waiting, waiting, waiting. You have so got to try these!!!
Paula says
They are so good, aren’t they? Try these too, I think I like them better> https://www.callmepmc.com/baked-seasoned-ritz-bits/
jette says
Plan to make these for a Valentine’s party. Should I spray the foil lined pan before I spread out the crackers so they don’t stick?
Paula says
Yes non-stick spray or butter and they still want to stick so work quickly.
Donna M Shipley says
Will one box work or do I need two?
Paula says
This recipe is written for 1 box, but I never make it now without doubling the recipe. My family loves it.
Betty says
I made according to directions. I found 1 box wasn’t enough. They tasted great although next time I would invest in a box of regular ritz and break them up after. The peanut butter ritz did not make any difference and was costly after I doubled the batch.
Judy Walker says
Your recipe looks DELICIOUS; however, I have a question before making these. Your instructions say to spread in a single layer but the picture shows these stacked in a triple layer. I’m a bit confused. Thanks!
Paula says
They’re already cooked, cooled, and in a bowl in the photos. The process goes too fast for me to take pictures during cooking them. They’ll stick together if they’re not in a single layer when you pour the caramel on them. Believe me, I made a mess of the first batch I made. The caramel cools and gets stiff too quickly to break them apart if they’re stacked.
Jackie says
I can’t find peanut butter ritz crackers anywhere. So… I improvised! I used rice Chex and corn Chex mixed together. I covered two cookie sheets with both mixed cereals and followed your directions to the T! Delicious!
GreenDoor says
Saw this in the Weekend Potluck. Tried ’em. Should’ve quadrupled the recipe. My husband is going insane. He tried one as a “snack” since he’s abstaining from desserts during Lent and how he’s getting itchy for Easter so I can make him a special batch. The kids have started a mutiny to get to them before I can. I even reduced the sugar by 1/4 cup and they are still just that good. Thank you for sharing!
Paula says
So happy you enjoyed them
