Strawberry Mojito Cocktail Recipe

A Strawberry Mojito is a seasonal twist on a classic cocktail. It’s a delicious, refreshing, and easy-to-make cocktail that takes less than 5 minutes to make.
Making Strawberry Mojitos is a fun and easy way to brighten up your spring and summer get-togethers with a special cocktail. Fresh strawberries muddled with lime, mint, sugar, and topped with sparkling water are sure to make a statement. Not only does it get the party going, but it’s also a big hit with all of your guests. The combination of sweet and tart flavors makes it irresistibly delicious.
Strawberry Mojito
One of my favorite cocktails is the traditional mojito. They’re so refreshing and light tasting, perfect for Spring and Summer. Add strawberries or any fruit makes it next-level. Try any in-season fruit for the strawberries. Blueberries, peaches, and even watermelon makes a lovely mojito.
As a whole Southerners love sweet drinks over ice. Because of our hot, humid climate a cold drink is always welcomed. Sweet tea and homemade lemonade are favorites. As well, we even prefer our cocktails sweet and over ice. For example, Mint Juleps, daiquiris, and mojitos to name a few.
I have had an abundance of strawberries this year. I’ve made jam, bread, muffins and cake…why not put them in a drink?! This Strawberry Mojito has a light strawberry flavor. It is a refreshing twist from the traditional.
Ingredients you’ll need
- Strawberries
- Mint
- Rum
- Fresh lime juice
- Simple syrup
- Club soda
- Ice
- Mint and strawberry for garnish.
How to make a Strawberry Mojito
The most important step in this cocktail is muddling the mint and strawberries to break them down. This will release all that mint flavor and strawberry goodness into your cocktail.
I prefer to add a simple syrup to sweeten mojitos versus adding granulated sugar. Simple syrup is water and sugar boiled until the sugar is dissolved.
To make simple syrup, boil 1/2 cup of water and one cup sugar for three minutes. After it boils, allow the mixture to cool before making your cocktails. You can make this beforehand and refrigerate it. It’l keep in the refrigerator for two weeks.

- 2 strawberries sliced
- 6 mint leaves torn
- 3 oz light rum
- 1 oz fresh lime juice
- 1 oz simple syrup
- 2 oz club soda
- ice
- Mint sprig and whole strawberry for garnish
Instructions
- In a shaker muddle strawberries with mint leaves and 2 cubes ice. Add rum, lime juice and simple syrup. Shake 30 seconds. Pour into a glass filled with ice. Top with club soda. Garnish with strawberry and mint sprig.
For Simple Syrup
- Boil ½ cup water and 1 cup granulated sugar for 3 minutes. Cool. Keep refrigerated up to 2 weeks.
