GRILLED PORK CHOPS 3 WAYS

Just a few simple ingredients make a delicious and quick marinade. They are all you need to make these tender, flavorful, bone-in pork chops.

I prefer thick pork chops especially if I plan to grill them. Therefore, I chose four 1 and 1/2-inch thick bone-in pork chops. Bone-in chops don’t dry out as quickly on the grill.

If you aren’t a pork fan, try these marinades with chicken. As well, we love this recipe for grilled chicken legs.

I marinated them with one of these three sets of ingredients from 15 minutes up to  3 hours.

  1. Worcestershire, garlic, and olive oil
  2. Gulden’s mustard and orange marmalade
  3. Buffalo wing sauce

HOW LONG DO I COOK CHOPS?

Grill the pork chops over direct heat, with the lid closed, until the pork chops are well-marked, for 8-12 minutes total, turning once.

Your pork chops are safe to eat when a thermometer inserted into the thickest part of the meat registers 145 °F. However, it may appear slightly pink inside. That’s okay as long as the thermometer reads 145°F.

This 145°F temperature is 15 degrees less than the old standards of 160°F. However, research shows that at 145 degrees F the meat is as safe as cooking pork until it reads 160 degrees F. Furthermore, at 145 degrees F you will have much more juicy pork.

DO I HAVE TO LET PORK CHOPS REST?

As with any other meat allow pork tenderloin to rest for 5 to 10 minutes before cutting into it. This is what your pork will look like with a 5-minute resting time:

  • Take the pork off the grill at 145°F, will rise to 150 F – slices will be pink and moist
  • Remove pork from the heat at 150°F, will rise to 155 F – slices will be slightly pink and moist
  • Take the pork off at 160°F, will rise to 165 F – slices will not be pink but still should be relatively moist

Prep Time: 10 minutes
Cook Time: 12 minutes
resting: 5 minutes
Servings: 4 servings

Ingredients

  • 4 1 & ½-thick pork chops I prefer bone-in but you can do boneless

Marinade #1

  • ¼ cup Worcestershire
  • 3 cloves garlic minced
  • 3 tablespoons olive oil

Marinade #2

  • ¼ cup Gulden's mustard
  • ½ cup orange marmalade

Marinade #3

  • cup Buffalo wing sauce more if like spicy

Instructions

  • Heat grill to medium-high. Allow chops to come to room temperature for 30 minutes before grilling.
  • Sprinkle chops evenly with salt and pepper to taste.
  • Combine your marinade ingredients of choice. So either
Marinade 1, Worcestershire, garlic, & olive oil
Marinade 2, Gulden's mustard & orange marmalade OR
    Marinade 3, Buffalo wing sauce
Combine one marinade and brush on chops. Place in a ziptop bag, seal, and allow them to marinate from 15 minutes to 3 hours.
  • Grill, covered with grill lid, over medium heat (400°F) for 3 minutes, then turn a quarter turn and cook another 3 minutes, then repeat on the other side, or until a meat thermometer inserted into the thickest portion registers 145°F (temperature should rise another 5 to 10 degrees while resting).
  • Remove from grill, and allow to rest 5 to 10 minutes before serving.
