HOLIDAY MARGARITA WITH POMEGRANATE POPSICLE

Did you know that boozy popsicles are also known as poptails? That makes me laugh.

This holiday margarita and boozy popsicle is a pleasing cocktail in both appearance and taste. This combination is a must-have during the holiday season!

I have been wanting to share these with you for so long! I thought of this idea during the summer and made them several times to get the recipe just right. They’re so much fun and definitely provide a ‘wow factor’ when you serve them.

CAN I MAKE A HOLIDAY MARGARITA AND POMEGRANATE POPSICLE VIRGIN?

Yes, and you probably need to if they’re will be kids in attendance. After all, who can pass up a popsicle?

For four virgin margaritas

  • Rim the glass with salt or sugar
  • 3 tablespoons honey
  • 2 cups ice
  • 3/4 cup cranberry juice
  • 1/2 cup freshly squeezed orange juice
  • 1/4 cup lime juice
  • 3/4 cup Topo Chico (or other sparkling water)
  • garnish as desired

Combine all ingreients. Pour into sugar or salt-rimmed glasses. Serve over ice.

For virgin popsicles

Use the recipe below but omit Grand Marnier.

MAKE A SALT OR SUGAR RIM

  1. First, you’ll need a shallow plate or bowl of water, lime juice, or lemon juice. Dip the rim of your glass into the liquid. Alternatively, you could cut a lime or lemon wedge and moisten the rim with it.
  2. Next, you want to evenly dip the rim of your cocktail glass into the sugar, salt, or whatever you’re riming the glass with. I have used chocolate and caramel to the rim on appropriate cocktails. You may want to use coconut or sprinkles, dependingly on what cocktail you’re serving. 
  3. Finally, mix your drink and pour it into your glass. Garnish as desired and serve.

Ingredients

For popsicles

  • 1 cup cranberry juice sweetened
  • 1 tablespoon honey
  • 1 teaspoon orange zest
  • 1 teaspoon lime zest
  • 1 cup orange juice freshly squeezed
  • ¼ cup lime juice freshly squeezed
  • ¼ cup Grand Marnier or Cointreau
  • popsicle molds and sticks

For the Margarita

  • 40 ounces white cranberry juice
  • 5 medium lime juiced
  • 10 ounces triple sec
  • 15 ounces silver tequila
  • salt and lime juice for rimming glass
  • sugared rosemary, lime slice, & cranberries for garnish

Instructions

For the popsicle

  • Combine all popsicle ingredients. Stir to combine.
  • Pour into 10 frozen pop molds (2.5 ounces to 3 ounces each). Insert sticks and freeze for 2 hours or until they're completely frozen
  • To serve, dip the outsides of the molds into warm water to loosen them.

For the Margarita

  • In a shaker, add some ice and ingredients; juice, lime, triple sec, and tequila.
  • Cover with the top and shake for about 10 seconds or until the drink is chilled.
  • Rim your glass with lime juice and dip it in salt. Pour the drink over ice. Don't fill all the way to the top if you're adding a popsicle. Allow room for the popsicle.
  • Garnish with a fresh lime wheel, sugared rosemary, cranberries, and popsicle.
  • Unmold the popsicle and place in the glass. Serve immediately.
