I’ve just been busting at the seams to make another treat with cookie butter after making these Biscoff Layer Bars. I went ahead a purchased a jar. It sat on the counter for three days. I thought and thought about what I could make with it. I debated about just eating it with a spoon…I’m sure that would get the creative juices flowing, right?

I refrained.

I thought some more.

Then poof! I must have dreamed it because on a run one morning I thought of the peanut butter fudge topped with chocolate that my Mom used to make. Why couldn’t I do that with cookie butter?

*gasp* I could make a truffle and covered. it. in. chocolate!!!

And, that, my friend, is how this Three Ingredient Cookie Butter Truffle Recipe were born!

Then after all that cookie butter and white chocolate goodness, I gave them a little blig with a sprinkle of red sugar just to dress them up a bit.

Cookie butter truffles make regular chocolate or peanut butter truffles unapologetically jealous. With good reason!

Servings: 28 truffles

Ingredients

  • 1 and ¼ cup cookie butter like this
  • 1 cup confectioner's sugar sifted
  • 1 and ½ cup white or milk chocolate candy melts I like these

Instructions

  • Cream cookie butter and sugar together in a mixer. Mixture should be thick but sticky enough to form a ball and hold together. Add more cookie butter, 1 Tablespoon at a time if it doesn't stick together.
  • I used a small ice cream scoop to get even amounts.
  • Scoop it into a ball, roll in your palms
  • Place ball on a cookie sheet lined with waxed paper or parchment paper.
  • Freeze 15 minutes.
  • Melt chocolate in microwave.
  • Dip truffles in chocolate and place back on paper to dry.

  1. Paula, You’re so creative; I have to follow a recipe. I’ve never heard of cookie butter. I wonder if the grocers sell it here in Northern VA. These look delicious and love the festive red sugar!

    1. I bet they do, Joan. If MS stores have it surely you guys do! 🙂 In Walmart it’s with the peanut butter. Biscoff is the only brand I’ve seen. I bet it would be pretty easy to make it with the Biscoff cookies though. (Which I may try next.) I baked cakes for a restaurant in town for a couple of years and I really kind of learned what I could substitute and still get a good outcome while I was doing that. I got so tired of making the same cakes week after week I got creative.

  3. These truffles are pure genius Paula! I love how pretty they look 🙂 I love Biscoff and it’s so hard for me not to eat it by the spoonful but making them into truffles is such a wonderful idea! These would be a sure hit and gone in a flash 🙂 Pinning 🙂

        1. Not sure where you are and if there is one close by, but Trader Joe’s has Cookie Butter, too. It is very good and made of Speculoos Cookies.
