Recently I was asked to make cupcakes for the last day of a Summer camp. I’m honored when I can contribute, even in a small way to things like this. After all, making cupcakes was nothing compared to the teachers that give up a month (!) of their Summer mornings to teach kids and get these children up where they need to be for the next school year. Giving up a month is giving up half of their Summer vacation, we start school the first week of August.
I have the utmost respect for teachers, oftentimes they don’t get the respect and recognition they deserve! I know this first hand, my mother taught school for 29 years. Many, many nights she graded papers and did lesson plans at home (after she cooked dinner, helped me with homework, washed clothes and cleaned the house!) They have to take continuing education on their ‘vacations’, not to mention everything they do IN the classroom. So, if you’re able to read this, thank a teacher!!
Your Favorite Classic Vanilla Cupcake
So, I was asked to make a Classic Vanilla Cupcake, ‘white’ cupcake with ‘birthday cake’ icing, and ‘not a lot of icing’! Geez, I prefer A LOT of rich, creamy icing and VERY LITTLE cake!! But, I did what they wanted, and below you’ll see what I made. I did juice them up a little with some sprinkles!

- 1 cup milk
- 1 and ½ cups sugar
- 2 cups self-rising flour
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup coconut oil solid shortening
Instructions
- Preheat oven to 350 degrees. In the bowl of a mixer, cream sugar, and coconut oil. Add eggs and mix until creamy. Add flour and milk alternately, beginning and ending with flour. Add vanilla.
- Fill cupcakes 2/3 full with batter and bake 20 to 22 minutes until center is set. Cool in pan 2 minutes before removing.
Not a lot of icing?! they are crazy. Cah-rayzee. Give me all the extra icing. Beautiful cupcakes Paula!

This one is for my youngest granddaughter. She only eats vanilla cupcakes with vanilla icing. When I ask her if she wants to bake with me, she says, “Banilla?”. Thanks for a good basic recipe.

Crazy question?…..can bisquick be used instead of self-rising flour?
It won’t be the same as using the flour because bisquick has some fat already mixed in it. I think it would turn out more like a muffin, but I’ve never tried so I’m not exactly sure. I think I’ll try it sometime and see though.
It’s always necessary to have a classic vanilla cupcake recipe you can go to. This one looks perfect, and with so few ingredients, it sounds so simple!
I agree, I don’t think recipes have to have a ton of ingredients to be good. My Great Grandmother used to tell me “Honey, if you just have one great cake recipe, you’ll always have something you can give to friends.” haha, love that!
