3 Ingredient Slow Cooker Pot Roast is moist, flavorful and very tender. Weekday dinners don’t get any easier!
I use 98% fat free cream of mushroom soup always. With all the flavor cream of mushroom soup has, you’ll never miss the fat. I love saving calories without sacrificing flavor. This soup mixes with the onion soup mix to create a rich, flavorful gravy.
You can add potatoes, onions and/or carrots to the Slow Cooker Pot Roast, but I opted to make it a 3 ingredient recipe this time. I knew we’d eat leftovers of sandwiches the next night. Plus, I’m the only one that ends up eating the veggies when I put them in.
3 Ingredient Slow Cooker Pot Roast Tips
Roasts are typically made from tough cuts of meat. Don’t look at this as a negative, these cuts are usually inexpensive. Cooking them low and slow makes the meat more tender, not a positive if you don’t plan ahead. But, if you do plan ahead, plan to start a roast early in the day and forget it until dinner! The slow cooker or even your oven will do all the work for you! When choosing a roast I recommend getting a chuck roast , shoulder steak, rump roast or bottom round roast. Look for a cut that is well marbled with small pockets of fat not a large ribbon of fat running through the meat.
Plan for leftovers!
For sandwiches on the second night, I reheated the roast along with the gravy in a sauce pan. I toasted hamburger rolls with provolone cheese on them as the meat was reheating. I like my sandwich with just roast and cheese. Big Daddy likes to add banana peppers and roasted red peppers for a little zing to his.

- 2 pound beef roast
- 10.5 ounce can cream of mushroom soup
- 1 envelope onion soup mix
Instructions
- Turn slowcooker on low.
- Place roast in slow cooker.
- Pour cream of mushroom soup over roast then sprinkle the onion soup mix over roast.
- Cook on low 8 hours.
- Serve hot.
- Can also make sandwiches out of roast.

This is how I have made my roasts for years. The only difference is, I sear the roast on all sides before putting it in the crock pot. It really adds a lot of flavor. I have tried other recipes, but none of them measure up to this one. Simple, quick and delicious!

Stir the onion flakes, beef bouillon granules, onion powder, parsley flakes, celery seed, paprika, and black pepper in a bowl. Use as substitute for a 1-ounce envelope of dry onion soup mix.
